I like pork chops and pork roast in a slow cooker and baked. we eat some form of pork roast twice a week. Is it high in cholesterol?

Compared to what? Today's pork is much leaner than it used to be. Pork loin chops are very low-fat. A pan-fried boneless top loin pork chop has 22% of your daily cholesterol allowance. Is that high? A roasted center loin has 67%, so I guess that's getting up there.
I brine those center loin chops and pan fry them - brining makes them really juicy. Yum.
