Plain Cake Doughnuts

INGREDIENTS:
2 cups flour
1/2 cup sugar
1 teaspoon salt
1 tablespoon baking powder
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
2 tablespoons melted butter
1/2 cup milk
1 egg, beaten
1 quart oil for frying
optional - powdered sugar or cinnamon sugar mixture
PREPARATION:
For draining doughnuts, prepare a place with either newspapers or a brown paper bag. Top those with paper towels. Either flour clean kitchen counter or bread board for kneading doughnuts. Prepare a shallow bowl or plate with an inch of flour.

Heat oil in deep fryer to 375 degrees F.

Sift flour, sugar, salt, baking powder, cinnamon and nutmeg. Mix in butter until crumbly. Stir in milk and egg. With floured hands, lightly knead the smooth dough. Turn onto area prepared with flour. Pat dough into 1/4 inch thickness. Dip either doughnut cutter or two biscuit cutters (one 1-inch and one 3 or 4-inch) in flour. Use to cut-out doughnuts. Carefully drop doughnuts into hot oil, only a few at a time. Fry, turning once, for about 3 minutes or until golden brown. Drain on prepared paper towels. Sprinkle with powdered sugar or cinnamon-sugar mixture.

this is the easiest ever my mom used to make them when i was a kid and i made them for my kids. buy those refrigerate biscuits in the cans like pillsbury or whatever,the cheap ones not the big flaky ones. heat grease in pan on stove.open can of biscuits take each biscuit and cut a hole in center using an empty salt shaker a small one save the middle part too.place a few in hot grease for about a minute or so when brown lightly turn over and cook the other side when done place on a paper towel to drain off grease let cool down a bit then roll around in powdered sugar.they are great! good luck.

BUTTERMILK DOUGHNUT "HOLES"

1 1/4 c. all-purpose flour
3/4 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
Pinch of nutmeg
Pinch of cinnamon
1 egg, room temperature
2/3 c. sugar, divided
1/3 c. buttermilk
1 tbsp. butter, melted
Vegetable oil, for frying (keep the oil hot (375 degrees) and don't crowd the pan, so doughnuts brown quickly without absorbing too much oil.)

Sift flour, baking powder, baking soda, and salt together. Add nutmeg and cinnamon. In a bowl, whisk together egg, 1/3 cup of sugar, buttermilk, and melted butter. Combine with dry ingredients and mix until smooth. In a deep, heavy skillet or in an electric skillet, add oil to a depth of 2 inches. Heat oil to 375 degrees. Use a candy-frying thermometer. Using two teaspoons, scoop up batter with one and slide it off into the hot oil with the other. Let doughnuts fry until nicely browned, about 2 minutes, turning halfway through cooking. They will flip themselves over if they're rounded enough. With a slotted spoon, transfer them to a brown bag or paper towels to drain. Put remaining 1/3 cup sugar in a bowl or small brown bag. While doughnuts are still hot, shake them in the sugar to coat. Cool on wire rack and enjoy immediately. Makes 24 holes.

Just buy a can of Pillsbury buttermilk buiscuits and make a little hole on the center of each circle to make a donut. Fry them in hot oil for a minute, place them on a paper towel to get rid of excess oil, let them cool and sprinkle sugar and cinnamon over. They're delicious!
