Do you have an easy chicken catchatori recipe I could try?

My Mother used to make it when I was little and it was so good. She doesnt recall making it though, lol, she is nuts. I am looking for a simple yet tasty recipe for it. Id prefer one without wine though. A crockpot version would be nice. Please dont link me to web pages, just break it down for me. Thanks!

Slow-Cooker Chicken Cacciatore

Prep Time: 10 min. - Cook Time: About 8 hr.

1 3/4 cups Swanson(R) Chicken Broth (regular, Natural Goodness(TM) or Certified Organic)
1 tsp. garlic powder
2 cans (14 1/2 oz. each ) diced Italian-style tomatoes
4 cups mushrooms, cut in half (about 12 oz.)
2 large onions, chopped (about 2 cups)
3 lb. chicken parts, skin removed
10 cups hot cooked spaghetti, cooked without salt

Directions:
MIX broth, garlic powder, tomatoes, mushrooms and onions in 3 1/2-qt. slow cooker. Add chicken and turn to coat.
COVER and cook on LOW 7 to 8 hr.* or until done. Serve over spaghetti.

*or on HIGH 4 to 5 hr. Serves 6.

TIP: For thicker sauce, mix 2 tbsp. cornstarch and 2 tbsp. water. Remove chicken from cooker. Stir cornstarch mixture into cooker. Cover and cook on HIGH 10 min. or until mixture boils and thickens.

3-4 lbs boneless/skinless thighs and breasts
1 large onion, thinly sliced
2 large red or green bell peppers, sliced
3 cloves garlic, crushed
1/2 teaspoon each basil and oregano
1 (6oz) can tomato paste
fresh mushrooms, sliced
2 bay leaves
1 8 oz can stewed tomatoes with chiles
salt and pepper to taste
2 cups burgundy wine
Parmesan cheese, for sprinkling before serving

Place sliced onions on bottom of crock pot. Add chicken.
Stir together remaining ingredients and pour over chicken.

Cook on low 7-9 hours or high 3-4 hours. Serve over pasta, with a salad on the side.

chicken breasts cut into pieces-brown in oil and garlic. Remove from pan. Saute onions, peppers and mushrooms in same pan. Add chicken back in. pour some canned tomato sauce in. add some basil and simmer for about 1/2 hour.Serve over rice or noodles with garlic bread and salad.
