Needing recipe's for trip to grandparents, by car. No cold or hot items, please?
We are traveling to my husbands grandparents, and staying there for a few days. I would like to bring some food, to share with the family, but something that will travel well, and not require being cold or warmed up. We will bring a cooler, but they will have a house full, and most likely not fridge space. Any ideas for some good food that I can make before we leave to share for lunches, dinners, snacks?

snacks okay? this is a GREAT recipe. i use mixed nuts. get the unsalted nuts in the bulk isle of your store. i also usually add a little extra cayenne, but it's to your taste. oh, and don'y skimp and use dried rosemary, it won't work. you need the oils of the fresh stuff!
Rosemary Roasted Cashews
1 1/4 pounds cashew nuts
2 tablespoons coarsely chopped fresh rosemary leaves
1/2 teaspoon cayenne
2 teaspoons dark brown sugar
2 teaspoons kosher salt
1 tablespoon melted butter
Preheat the oven to 375 degrees F.
Place the nuts on an ungreased baking sheet and bake for about 10 minutes until they are warmed through. Meanwhile, combine the rosemary, pepper, sugar, salt and butter in a large bowl. Toss the warm nuts with the rosemary mixture until the nuts are completely coated.
Chex Mix is a classic or a trail mix with ur own personal twist

I would just bring some baked goods, like a bunt cake, cookies or brownies.
rice crispy treats get sum marshmellow cream and sum rise crispy treat cireal mix it together but candy in it or w/e else u want and mix it together put it in a baking pan an there u go
baked goods, breads and brownies are always popular and last a few days atroom temp. have fun.
well for a snack, here are these no bake peanut butter bars or the no bake oatmeal chocolate peanut butter cookies. um when we rode in the car we would bring the bag of bread and then a jar of peanut butter. or you can put in the cooler a pack of lunch meat and cheese.
My uncles always bring "their own" jerky, made with deer meat, antelope, or beef, we love snacking on the different types they come up with...
For the adults, bring jars of olives, pearl onions, tonic water and booze. Everyone will appreciate a vodka or gin and tonic at dinner. For the kids, bring snack cakes and cookies for desserts. For breakfast, bring bagels, and boxes of cereal. For lunch, bring fresh vegetables and greens for salads. (Most veggies do not have to be chilled in the first 2 days).
For dinner, bring fresh loaves of French and Foccacia bread.
These are some of my favorite family recipes. We always have them for picnics or get-togethers because they don't need to be re-heated or anything. Very easy too!
1. The most delicous quiche you have ever tried.
You need:
5 eggs
1/2 cup cream
1/2 cup milk
Pre-packaged puff pastry sheets
1 package (about 1 cup) frozen spinach
1/2 cup grated cheese
1 teaspoon nutmeg
small can corn kernels
1/2 cup cut up ham / bbq chicken / tuna / bacon - whatever you have
1/2 teaspoon pepper
Some sliced mushrooms / tiny tomatoes and a bit of extra grated cheese for decorating.
Line your pie dish with the pastry sheets.
Mix all the other ingredients in a big bowl and pour into the uncooked pastry shell.
Decorate top with slices of mushroom / tomato and sprinkle extra cheese over.
Bake in moderate oven for 1 hour (it will puff up and go brown on top) Remove from oven. Let cool.
Slice and eat. It is so good even the kids love it.
2. Greek triangles - crisp and good
You need:
1 cup ricotta cheese
1 packet frozen spinach (defrost and drain)
1/2 cup feta cheese
Sheets flaky pre-bought filo greek pastry
Mix together in a bowl with a little pepper sprinkled in. Lay the pastry out on the bench. Brush with melted butter. Cut each piece of pastry into four squares.
Place a spoonful of the mixture on the middle of each pastry square. Fold it over and press. Brush top with butter.
Lay all squares on your oven tray. Bake in moderate oven until brown and puffed. Cool
Pack in a container with paper towel between.
3. Sweet choc chip cookies - these won't last long
1 can condensed milk
1/2 cup white sugar
2 cups all purpose flour
1/2 stick butter
1 packet nestle choc chips
melt butter - add sugar, milk and flour. mix.
add choc chips.
shape into little balls and press onto greased tray. bake in moderate oven about 7 minutes (or until edges just lightly browned). Delicious
4. French fruit flan
1 sweet pie shell (bought or make yourself) - you can even make it a rectangular one in a brownie tray
1 packet vanilla instant pudding
1 container thick cream
milk
canned fruits - apricots - mandarin - cherries
small jar apricot jelly
Make the pudding but substitute cream for half of the milk.
Pour into pie shell / base. Refridgerate.
Decorate top with canned fruit.
Make a glaze with the jelly by melting a couple of spoonfuls in the microwave with a spoonful of water. Brush over top of fruit. the glaze will set and your flan will glisten. It will be ok to travel in a container or covered with plastic wrap. Or, it is so easy you can make it when you get there.
4. Best brownies in the world
1 cup white sugar
2 eggs
1/2 cup all purpose flour
1/3 cup baking cocoa powder
1/2 cup butter
1 teaspoon vanilla
mix all together. grease and flour a brownie tray. pour mixture in. bake in moderate oven for about 20 minutes (or until brownie bounces back when pressed gently in the middle with your finger and edges browned).
cool - cut - yum. (sometimes the edges burn a little - cut them off and discard if so).

Chocolate Brittle Surprise
INGREDIENTS
* 35 unsalted soda crackers
* 1 cup butter
* 1 cup packed brown sugar
* 2 cups semisweet chocolate chips
* 1 cup chopped pecans (optional)
DIRECTIONS
1. Preheat oven to 350 degrees F (180 degrees C). Cover cookie sheet with foil. Spray foil with cooking oil spray.
2. Place crackers on foil in 5 x 7 inch rows.
3. Microwave butter on high for 2 minutes. Add brown sugar and stir. Microwave on high for 2 more minutes, stirring every 30 seconds.
4. Pour over crackers. Bake 17 - 20 minutes (should bubble but not burn).
5. Sprinkle chocolate chips over hot crackers. Spread after 2 minutes (chips have softened). Sprinkle nuts on top.
6. Refrigerate 1 hour. Break into pieces. Can be frozen.
you might want to stay away from sugar snacks-
as we all know sugar and confined spaces do not mix.
**your best choice is having the kids -if they are old enough to create their own "trail mix" using dried fruits and their other favorite clean finger foods.
They will each have their own flavor of choice to start with. And should be proud to eat their creation.
