SOOO GOOD!

Basic Butter Cookies
2 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp salt
1 1/2 sticks (3/4 cup) unsalted butter, softened
1 cup sugar
1 large egg
1/2 tsp vanilla
Garnish: coarse or sanding sugar*; or melted chocolate
1 Whisk together flour, baking powder, and salt in a small bowl.
2 Beat together butter and sugar in a large bowl with an electric mixer at medium-high speed until pale and fluffy, about 3 minutes in a standing mixer (preferably fitted with paddle attachment) or 6 with a handheld. Beat in egg and vanilla. Reduce speed to low, then add flour mixture and mix until just combined.
3 Form dough into a 12-inch log (2 inches in diameter) on a sheet of plastic wrap and roll up dough in plastic wrap. Chill dough on a baking sheet until firm, at least 4 hours. (To roll cookies into balls, see cooks' note, below.)
4 Put oven racks in upper and lower thirds of oven and preheat oven to 375°F.
5 Cut enough 1/8- to 1/4-inch-thick slices from log with a heavy knife to fill 2 ungreased large baking sheets, arranging slices about 1 inch apart (chill remainder of log, wrapped in plastic wrap). If garnishing with coarse sugar, sprinkle slices with it.
6 Bake cookies, switching position of sheets halfway through baking, until edges are golden, 12 to 15 minutes total. Cool on sheets 3 minutes, then transfer with a metal spatula to racks to cool completely. Make more cookies with remaining dough on cooled baking sheets.

Sugar Cookies, Soft And Chewy
2 cups (10 ounces) all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
16 Tbs unsalted butter (2 sticks), softened but still firm
1 cup (7 ounces) granulated sugar, plus
1/2 cup (3.5 ounces) granulated sugar, for rolling dough
1 Tbs light brown sugar
1 large egg
1 1/2 tsp vanilla extract
1 Adjust oven racks to upper- and lower-middle positions; heat oven to 375 degrees. Line two large baking sheets with parchment paper. Whisk flour, baking powder, and salt in medium bowl; set aside.
2 In standing mixer fitted with paddle attachment or with hand mixer, beat butter, 1 cup granulated sugar, and brown sugar at medium speed until light and fluffy, about 3 minutes, scraping down sides of bowl with rubber spatula as needed. Add egg and vanilla; beat at medium
3 speed until combined, about 30 seconds. Add dry ingredients and beat at low speed until just combined, about 30 seconds, scraping down bowl as needed.
4 Place sugar for rolling in shallow bowl. Fill medium bowl halfway with cold tap water. Dip hands in water and shake off excess (this will prevent dough from sticking to your hands and ensure that sugar sticks to dough). Roll heaping tablespoon dough into l 1/2-inch ball between moistened palms; roll ball in sugar, then place on prepared baking sheet. Repeat with remaining dough, moistening hands after forming each ball and spacing balls about 2 inches apart on baking sheet (you should be able to fit 12 cookies on each sheet). Using butter wrapper, butter bottom of drinking glass; dip bottom of glass in remaining sugar and flatten dough balls with bottom of glass until dough is about 3/4 inch thick.
5 Bake until cookies are golden brown around edges and just set and very lightly colored in center, 15 to 18 minutes, reversing position of cookie sheets from front to back and top to bottom halfway through baking time. Cool cookies on baking sheet about 3 minutes; using wide metal spatula, transfer cookies to wire rack and cool to room temperature.

hi this i think will work if you have the other stuff
MEXICAN CINNAMON SUGAR COOKIES
COOKIE DOUGH
1? cup flour
? teaspoon salt
? teaspoon baking powder
2 teaspoons cinnamon (or replace with crushed anise seed to taste)
? cup vegetable shortening or lard
? cup sugar
1 egg
1 to 2 tablespoons brandy or milk

CINNAMON SUGAR MIXTURE
? cup sugar
2 teaspoons cinnamon
preparation
Sift or stir together in a bowl the flour, salt, baking powder and cinnamon (or anise seed to taste), and set aside.

In a medium bowl beat the vegetable shortening or lard with a mixer until light. Slowly beat in the ? cup sugar until light. Beat in the egg and 1 tablespoon brandy or milk, mixing until light and fluffy. Slowly beat in the flour mixture. If it becomes too stiff to mix, stir in 1 tablespoon more brandy or milk until dough holds together and is semi-firm and can be shaped into logs. If it is too stiff, the logs will not hold together. If too soft, the logs will not hold their shape.

In a small bowl stir together the cinnamon sugar mixture and set aside.

On a lightly floured surface or pastry board knead the dough briefly until it holds together without cracking or breaking apart. Divide the dough into 2 equal parts. Return 1 part to the bowl. On the lightly floured surface shape the other piece of dough into a log, and with the palms of the hands roll it back and forth until it is about 12-inches long. With a sharp knife cut the log into fourths, then cut each fourth into 5 slices. Roll each slice in cinnamon sugar mixture and place on an ungreased cookie sheet. Place slices about 1?-inch to 2-inches apart. Place cookie sheet in a preheated 350° oven, and bake until done, about 9 to 10 minutes. Cookies should not be over baked or browned. Remove from oven, and while cookies are still warm, roll each cookie again in the cinnamon sugar and place on a wire rack to cool.

Repeat the above process for the other piece of dough. You can probably do this while the first cookie sheet is baking.

After all cookies have cooled, store them in a covered container or in a zip-lock bag.
