yes. the only thing you have to be careful of is that butter melts, in the oven, and oil does not. so you have to make cookies that you roll out and shape before you cook them. also they will tend to be harder, and have a slightly different taste. Generally i make cookies with butter, because they generally seem to turn out better, but if you want to use oil instead of butter in more things, you should really try making oil pie crust. that is really something that does better with oil than butter, but it takes skill. The trick is not to handle it too much. Here is a recipe. Ive never had a better pie crust.
single Crust
1 1/3 cup flour
1/2 tsp salt
1/3 cup oil (liquid oil like vegetable oil)
2-3 tbs cold water
double Crust
2 cups flour
1 tsp salt
1/2 cup oil
3-4 tbsp Cold water
Mix flour and salt. Add oil, mix with fork. cut with pastry culler. sprinkle water on top. Mix well. Press into ball. Roll out immediately. if you are making a cooked single crust for like a pumpkin pie, or lemon meringue pie or something, cook it at 450 degrees F for 12-15 min.
Oil does best for things that are supposed to be more crackly, or bready, like biscuits or breads, or cakes. I don't make brownies very often, but i think you should go ahead and experiment with that. It might work well.

i never tried it ---however ----i would try it just enough to moist little at a time to right thickness you would want as useing the butter
