Peppers! To store or not to store?

I recently grew some Ceyene peppers and I would like to know how to store them. Can I can or feeze them?


Answers:
The easiest way to preserve them is to thread them with needle and thread through the stems (not through the pepper) and just hang them up (not touching each other) to dry. When thoroughly dry, just put them in a jar as-is or grind them up in a blender or food processor (making sure to discard the stems, of course!). Store in a cool, dry, dark place like any other spice.

Another way is to grind them up first, then spread out to dry on a baking pan in oven at 135F. When thoroughly dry, you may have to re-blend to make sure it's all broken up. Store as above. (You could also dry the whole peppers, but it would hurry things along if you sliced them lengthwise or at least puncture them to let out moisture.)

Freezing them will make them mushy. I don't know about canning them, I guess so, or you could try pickling them too, but I've never done either.

sorry thats my answer to EVERYTHING! if there is any cooking whizzes u know ask them! If not go 2 ur local library and rent out some cook books! U may b lucky enough 2 find a book on pepper! (it'll probably have LOTS o little kids stuff but dw, it may say how 2 store it =])

I would not freeze as they are full of water and do not freeze well.
You can dry them then freeze and re hydrate when needed or you can make hot sauce from the fresh ones that will last forever.

pepper is a very delicate vegetable it canot be frozen but many people try to dry green peppers in the sun light till they become dry & during which they grind them and use them as a seasning Her in lebanon we make reseve pepper in the same way like pickils it reseve the tast & the shap as well.
