Question:

Any good recipe ideas using some or all of these ingredients?

Chicken breasts
asparagus
roasted red peppers
crushed tomatoes
garlic
fresh mozarella
fresh basil

I was thinking of some sort of pasta dish using the chicken and asparagus? Any ideas. Thanks alot.

Cook the peppers and asparagus together as a side dish.
Make a nice sauce out of the tomatoes, garlic and basil, cook up the chicken breast in some garlic and olive oil, when done plate it up with the chicken breast, a slice of mozzarella on top with the sauce spooned over that (you can do it on a bed of pasta), serve the peppers and asparagus as a side, I would steam the asparagus, toss it with the peppers, drizzle some garlic infused olive oil over it.


Dice up the mushroom and add to the tomato sauce, or brush some garlic and olive oil on them and grill, YUMMO!

I would use everything but the asparagus to make chicken Parmesan. Then steam the asparagus to serve on the side. Delicious!

I would use a little oil and butter and saute up some garlic. Add the chunked chicken breast, plus some salt and pepper, and saute a few minutes, and then add cut-up asparagus and sliced roasted red peppers. Cook until chicken is done, and asparagus is bite-tender. Stir in some chopped basil at the very end and toss over cooked pasta. If you want to add the mozzarella, sprinkle some over the pasta and chicken in the pan and then pop the whole thing under the broiler just enough to melt the cheese.
Yummy.

Get yourself some pizza crust and make one helluva pizza.

Pizza dough

2-3 cups All purpose flour (I usually use a mixture of wheat flour and AP to make it a little more healthy)
1 package yeast
1 cup very warm water
1 tsp salt
3 tbsp olive oil
1 tbsp sugar (I like to use brown sugar)


Dissolve yeast in water. Add 1 cup flour, salt, sugar, olive oil, and mix with electric mixer. Gradually add flour 1/2 cup at a time until mixture leaves the sides of the bowl. On a floured surface, knead dough for 5-8 minutes.
Coat a bowl with olive oil, set dough in bowl, and cover and let rise for 20-30 minutes. Press out dough with either a roller or your hands to make a crust. I like to use my hands to keep most of the air in the dough mixture.

Either bake the crust in an oven at 500 degrees until brown, add toppings, and put back in oven until cheese is melted....or try grilling it. Make sure the crust is well oiled and place on a grill (low to med low) for a couple minutes each side. Add toppings, place on aluminum foil, and put back on grill to melt the cheese, etc.

i made some greek asparagus a while back and you mix together basil roasted red peppers olive oil balsamic vinegar and a little salt (all of these are to taste btw) and 3 minced garlic cloves then pour it over the asparagus and top it with feta cheese and bake at 350 degrees until the asparagus is tender.

My favorite salad is sliced tomato with fresh mozzarella on top then add a whole fresh basil leaf on the mozzarella and drizzle with balsamic vinegar and olive oil--sprinkle with sea salt and cracked pepper--excellent! (I know u have crushed tomatoes, but try this salad some time!) :)
