I need help for this summer!?

This summer I don't wanna eat myself silly of boredom and eat junk food and fatty foods. Do any of you have simple recipies that are good. and taste good too?!

just do what i do. whenever you feel yourself wanting to eat junk, drink water!, it cleans ur insides, its healthy and calorie free!!!!

i would start by creating your own cookbook, start doing recipes you havent tried before and make it fun. i'll give you a couple of my fav low cal ones

Black Beans and Couscous
Ingredients
1 cup Black bean, soaked overnight
1-2 Bay leaves
6-8 cloves Garlic, minced
2 tsp Oregano, dried
1 tsp Cumin
1 tsp Baking soda
1 tsp Salt
1 cup Raw couscous, steamed
Pepper, optional
Preparation
In a saucepan, place beans and bay leaves in enough water to cover beans and bring to a boil. Reduce heat and simmer for 1 1/2 hours or until beans are tender. Add garlic, oregano, cumin and pepper. Simmer 30 minutes more or until beans are softened, add baking soda and salt, mix well.
Steam couscous.
Serve couscous with a laddle of black beans.

Cajun Shrimp Fettuccine
Shrimp with a bite.
Ingredients
6 oz Uncooked fettuccine
1/2 lb Medium shrimp, shelled and deveined
2 slices Bacon, diced
2 cloves Garlic, minced
1/8 tsp Ground red pepper (or more to taste)
1 can (14-1/2 oz) Cajun or original styled stewed tomatoes, drained
1 can (8 oz) tomato sauce
1 Green bell pepper, cut into thin strips
Preparation
Cook pasta according to package directions; drain. Cut shrimp in half lengthwise. In large skillet, cook bacon until crisp; drain. Stir in garlic and ground red pepper; cook and stir 1 minute. Add stewed tomatoes with juice and tomato sauce. Cook, uncovered, over medium heat 10 minutes, stirring occasionally. Add shrimp and green bell pepper; cook 2 to 3 minutes or until shrimp are pink. Just before serving, spoon sauce over hot fettuccine.
Cook's Notes
If using original style tomatoes, add a pinch each of ground cinnamon, ground cloves, and ground red pepper to tomatoe mixture; continue as directed.
Hint: After deveining shrimp, rinse thoroughly under cold water; drain.

Key West Chicken
Ingredients
3 tablespoons Soy sauce
1 tablespoon Honey
1 tablespoon Vegetable oil
1 teaspoon Lime juice
1 teaspoon Chopped garlic
4 Skinless, boneless chicken breast halves
Preparation
In a shallow medium dish, blend soy sauce, honey, vegetable oil, lime juice and garlic. Place chicken breast halves into the mixture.Marinate in the refrigerator at least 30 minutes.Preheat an outdoor grill for high heat and lightly oil grate. Place marinated chicken on the prepared grill. Cook 6 to 8 minutes on each side, until meat is no longer pink and juices run clear.

Preparation
Cook, peel and devein shrimp.
Alternate shrimp, onion, bay leaves. Pour marinade over. Cover and chill at least 24 hours before serving.

Orange Roughy in Orange-Mint Yogurt Sauce
Ingredients
1 1/2 pounds Orange roughy fillets
1 tsp Olive oil
1 tsp Minced garlic
1/2 tsp Minced ginger root
1 (8oz) carton plain nonfat yogurt
1 tsp Grated orange peel
1 tsp Minced fresh mint leaves
White or black pepper
2 Heads romaine lettuce, chopped
Preparation
Pre-heat oven on Med-high broil
1. Stir together yogurt, orange peel, and mint leaves. Season to taste with pepper.
2. Rinse fish, then pat dry.
3. Brush fish with oil and sprinkle with garlic and ginger.
4. Broil 3 to 4 inches from heat source for about 5 minutes or until fish flakes when tested with a fork.
5. Arrange lettuce on plate, top with fish, and drizzle yogurt sauce on top.

My husband was recently diagnosed with diabetes and so he was put on a low carb 2000 calorie diet, and soon will be lowered to 1800 calories. We have been doing this since the begining of April and he has lost 15 pounds and I have lost 11 pounds. And the truth is we eat just about the same things, keep no junk food in the house, eat no fried foods, everything is baked or grilled. Example of yesterdays meal:

Breakfast:
Bowl of peach oatmeal
Cup of yogurt
2 scrambled eggs
8 oz of OJ

Lunch:
Grilled Ham and Cheese on Rye Bread
Sun Chips
Orange
cheese stick

Snack #1
Granola Bar

Dinner:
3 oz of pork chop boneless and lean cut(this is alot of meat)
1/2 cup of green beans
Baked potatoe with teaspoon of butter
1 cup of mixed fruit (fresh fruit) or 1/2 cup of canned mixed fruit with lite syrup

Snack #2
Chocolate Bananna Smoothie (you can buy the mix at a Super Wal-Mart) It is sugar free reducing your carbs and only 110 calories
3 cups of low fat, low carb, popcorn

Go online and research low carb and calorie diets, you can get many recipes. And if you eat like this and exercise at least 5 nights out of the week not only will you get to eat good food but you will feel great and lose weight. It really does work!! You just have to stick to it. We walk everynight 1-3 miles.

Also with a low carb diet you should try things that are salt free, when it comes to flavoring food it can be a little hard but try

I love both of these pasta recipes for a number of reasons - they are crazy simple to make, they can be used as a main dish or as a side dish to grilled (or broiled) chicken and fish, and I love them both hot, or even cold, the next day! Multi-talented dishes...and healthy too! lol!

Lemon Spaghetti

1 pound spaghetti
2/3 cup olive oil
2/3 cup grated Parmesan
1/2 cup fresh lemon juice (about 3 lemons)
Salt and freshly ground black pepper
1 tablespoon lemon zest
1/3 cup chopped fresh basil leaves

Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 8 minutes. Meanwhile, whisk the oil, Parmesan, and lemon juice in a large bowl to blend.

Drain the pasta, reserving 1 cup of the cooking liquid. Toss the pasta with the lemon sauce, and the reserved cooking liquid, adding 1/4 cup at a time as needed to moisten. Season with salt and pepper. Garnish with lemon zest and chopped basil.

Linguine with Fresh Tomato Sauce
For tomato sauce:
2 cups seeded, and coarsely chopped tomato
1/2 cup extra virgin olive oil
1 cup firmly packed fresh basil leaves, minced
1 cup firmly packed fresh parsley leaves, minced
3 tablespoons freshly grated Parmesan
3 garlic cloves, or to taste, minced
2 teaspoons salt
1 pound linguine
Fresh parsley to garnish

Make tomato sauce:
In a bowl combine well all the sauce ingredients and let the sauce stand at room temperature, covered, for at least 1 hour.
In large pot, bring 5 quarts of salted water to a boil. Add linguine and stir to prevent sticking. Return water to boil and cook until pasta is firm but cooked, approximately 7 to 10 minutes, stirring occasionally. Drain pasta well. Serve with tomato sauce, and garnish with fresh parsley.

banna pudding is wonderful get the sugar free pudding vanilla waffers and bannas oler ones are better oh and cool whip very low fat in there make the pudding like it says on box then mix cool whip into pudding and then just layer cookies bannas and pudding till gone yummy

jello is also good for summer and i am really big on cool whip with almost everything
