What would be a good side dish for parmesan-crusted chicken?

I would do something green - a spinach or broccoli side is a great compliment to parmesan chicken. Or you could do a roasted asparagus, or sauteed greens which would also work really well.
I love the wild rice suggestion, too...Wild rice has such a beautiful color, texture and flavor...that would also work nicely!

ummm that sounds good with a long-grain and wild rice with a nice green salad and french bread
i would say fettuccine Alfredo and maybe some sliced cucumbers, or sliced tomatoes, and definitely some cheese sticks or cheese garlic toast.
Pasta of some form, some broccoli, or perhaps a salad
Ratatouille....saute zucchini, eggplant(if you like it), bell pepper, yellow squash, and red onion in olive oil until tender but still crunchy. Add tomato wedges. Sprinkle with cheese (cheddar, gruyere, smoked provolone...whatever), cover and cook until cheese is melted.
Stuffed zucchini.
Spinach risotto
Some type of pasta in a tomato or pesto sauce. I like dried tomato pesto, and I think gnocchi would be a good pasta.
Pasta with broccoli and garlic and green olives and olive oil (I like orrechiette pasta for this).
You really should have a salad with that chicken too, or maybe just sliced fresh tomatoes.

French cut Beans; Broccoli; Asparagus; peas/ pearl onions; Brussles sprouts ???? each has their own white sauce.

When I make parmesan crusted chicken, I usually make an angel hair pasta with a cheesy sauce. Then, for color, I make broccoli or asparagus for a veggie.
Try risotto with spring vegetables for your side, a nice spinach or radicchio salad as your dinner vegetable, and fruit salad or gelatin with fresh whipped cream for dessert. Unless you live in Antarctica, this is the season for fresh eating and breezy cuisine.
Caesar salad & fresh crusty bread if you want a light meal,
or roasted potatoes & green beans sauteed with a balsamic vinagrette for a heartier meal.
