Honey-Glazed Salmon Burgers
2/3 cup honey
2/3 cup ketchup
1 tablespoon cider vinegar
2 teaspoons prepared horseradish
1/2 teaspoon minced garlic
1/4 teaspoon crushed red pepper flakes
14 3/4 ounces salmon -- drained
3/4 cup plain dry bread crumbs
1/2 cup chopped onion
1/3 cup chopped green bell pepper
3 egg whites
2 teaspoons vegetable oil
4 hamburger buns -- split, toasted
Prepare grill according to manufacturer's instructions.
In small bowl, combine honey, ketchup, vinegar, horseradish, garlic and red pepper flakes until well blended. Reserve half of sauce to use as a condiment.
In separate bowl, mix together salmon, bread crumbs, onion, bell pepper and egg whites. Blend in 2 tablespoons of the sauce.
Divide salmon mixture into 4 patties. Lightly brush grill rack with vegetable oil.
Grill burgers about 5 minutes per side, turning 2 to 3 times and basting with sauce, until browned and heated through. Serve on buns with reserved honey barbecue sauce.
Serves 4.
We have a traditional backyard bbq every year for Memorial Day.....We grill either chicken, ribs, pork loin or a combo ( hot dogs for the kiddies, just in case). Then I fix sides of homemade potato salad, coleslaw, baked beans, grilled corn on the cob, cucumber salad & garlic bread. For dessert, watermelon!!
Our favorite is to have a shrimp and crab boil. Put some zataraine's in the boiling water along with potatoes and corn. At the last minute, throw in the shrimp and crab. Drain the pot and pour it on a table covered in newspaper or butcher wrap. Serve with small bowls of melted butter and cocktail sauce. Eat with your hands, no plates required. Keep the trash can pulled up near the table to discard your shells.
