Are soaked uncooked kidney beans safe to eat?
A few days ago I did a good deed by serving food at the local soup kitchen. I did not prepare the food and the cook made chili. he cooked the sauce and meat and forgot to add the beans. supper was already late so he decided to add the soaked uncooked beans to it. he claimed it was safe. I whispered a warning to the people eating and most of them picked the beans out however some ate the beans. can this cause health problems?

Seriously, The proteins will not break down if uncooked and will go to the intestines largely undigested where bacteria will turn them into METHANE GAS!

They will probably have some bad intestinal cramps if the beans weren't cooked completely, because they are hard to digest unless they have been boiled for several hours.
Beans get their bad reputation of causing gas (farts) because many people eat them either without cooking them enough, or by letting them ferment for too long.
As long as the beans were washed well before being soaked there shouldn't be a problem. If (and that's a big if) the beans contained any germs or bacteria, these were probably killed when the cook added them to the hot chili. I do think however that you should inform someone who is in charge of the soup kitchen that the cook did this.....next time it could be something that would make people sick.
Probably safe, but hard to chew. Health problems?, seriously doubt it except for gas produced later.
