What's the easiest and quickest way to cook courgettes?
I have some courgettes to go with our Shepherds pie (just as a change). What is the quickest and easiest way to cook them. Can they be sliced and steamed or will I need to fry them?
Answers:
You can steam then, boil them, microwave them but my preference is to bake them with a little olive oil or to saute them with some butter for about 10 mins.
PS - For the Americans amongst us courgettes are the English word for Zuchinni
chuck them into a fire.....about 6 seconds...
They are quite a soft vegetable so don't take long to cook, I prefer to thickly slice then steam mine.
You can steam them or saute them, either way is good, just try not to overcook them.
Slice and boil for five mins.

Slice, squeeze of lemon juice and do the garlic and butter thing.
Just 2 days ago I used them in a pasta sauce i made.
I sliced them and cooked them with chopped onions first. Then i added the chopped tomatoes. I found that they taste better when they are cut into quite small pieces for this dish.
steam them for 8 mins in a veg steamer
Cut them in very thin slices and fry them with a little onion and a tiny drop of water, it will take about 10 minutes. Buon appetito!
I'd slice them in half, season with rock salt and black pepper and drizzle with some extra virgin olive oil, pop in a warm-hot oven for around 15 mins. Beautiful.
Slice them up, but not too thin and roast them in the oven like you would roast potatoes! Should take about 25 minutes!
They taste delicious!
Stuffed Courgettes
4 small courgettes, ends trimmed
3-4 tablespoons olive oil, plus extra to drizzle
3-4 tablespoons balsamic vinegar, to drizzle
250 g ricotta cheese
1/2 teaspoon lemon juice
1/4 cup fresh basil leaves, chopped
50 g pine nuts, toasted
1. Slice the courgettes length ways, using a swivel vegetable peeler - you'll need 24 long strips.
2. Drizzle some of the olive oil and balsamic over two large plates and lay the strips flat, trying not to overlap.
3. Sprinkle with more oil and balsamic; cover and leave to marinate in the fridge for at least 20 minutes. Can be prepared up to 6 hrs ahead.
4. Mix the ricotta with lemon juice and seasoning to taste.
5. mix in the basil and pine nuts.
6. Place 1 tsp of the ricotta mixture onto one end of a courgette strip and roll up.
7. Repeat until you have used up all the filling.
8. Arrange rolls upright on a plate and grind over some black pepper.
9. Drizzle with a little more oil and balsamic vinegar to serve.
Slice them and either steam or boil them, but not till they're soggy. Then drain and toss them in a little salt, a little butter, a lot of freshly ground black pepper and a squeeze of lemon (optional).
Peeled, chopped, fried in veg. oil. Eat them as they are or add them to your recipe as required.
