Eggless Cake

Ingredients

1. Maida- 3 tumbler or glass full
2. Powdered Sugar-2 tumbler (very fine powder)
3. Refined Oil-1/2 tumbler
4. Milk-1/2 tumbler
5. Vanilla Essence-few drops
6. Baking Powder - 1 tbsp
7. Baking Soda - 1/4 tsp
8. Butter - 4 tbsp (full)
9. Musumbi or Orange- 1

Method:


Sieve the maida with baking powder and baking soda atleast 4 times.
Take the juice of musumbi or orange do not add water to this juice.
Take oil, sugar, butter and beat it well with hand till it becomes light and fluffy. To this mixture alternate maida and juice (cut and fold motion). If the juice is over start adding milk. When the mixture is done it falls in folds.You can add cold water if needed.
Pour it in a greased baking dish and bake.
THIS CAKE CAN BE MADE IN A COOKER ALSO.

Baking in a Cooker: Heat the cooker for sometime. Keep the cake dish inside. Do not cover it and cover the cooker with some other lid. Keep the flame sim and bake for 1 hour 5-15 mts.

EGGLESS, MILKLESS CAKE :

1 1/2 cups brown or white sugar
1/2 teaspoon cloves, allspice or mace
2 cups hot water
1/2 pkg raisins
1 teaspoon salt
1 teaspoon cinnamon
2 tablespoons shortening (butter or Crisco)

Combine the above ingredients and boil for 5 minutes. Let mixture cool, then add:

3 cups sifted flour
1 teaspoon baking powder
1 teaspoon baking soda


Preheat oven to 350°F. Turn batter out into a 9" tube or Bundt pan or an 8" square cake pan that has been greased and floured.
Bake at 350°F for 1 hour. Allow to cool before frosting with white, lemon or vanilla frosting or use White Frosting; see below.


White Frosting:

1/2 stick butter
3 cups confectioners sugar
3 tablespoons water or milk
1 1/2 teaspoons vanilla or lemon flavoring


Heat butter in milk or water, add to sugar and flavoring. Beat until smooth. Frost top and sides of cake.

QUICK CHOCOLATE EGGLESS CAKE

1-1/2 cup flour
1/3 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup sugar
1/2 cup vegetable oil
1 cup cold water
2 tsp vanilla extract
2 tsp vinegar

Preheat oven to 375°F.
Spray a small baking pan (8x12) with vegetable spray or Baker's Joy.

Combine dry ingredients directly in the pan. Mix all the wet ingredients

In a small bowl, combine remaining ingredients leaving out the vinegar until the final step.

Combine wet and dry ingredients, stirring together in pan until well combined. Stir in the vinegar rapidly and immediately place pan into preheated oven and bake for 25 to 30 min.

Optional: You can stir in 1/2 cup semi-sweet chocolate chips just before baking to make a richer cake with melted chocolate bits or swirls.

There are all kinds of eggless cakes on the internet. Also, I've seen this question and quite tasty looking answers on this forum before (and quite recently). Try doing a Search for Questions on Yahoo Answers!

I assume you are Vegan, so egg whites are out. I myself have used apple sauce or corn oil, but its not quite the same.

get a box of cake mix - any brand will do.
add one 12 oz can of soda
mix well
bake according to directions on box
frost
enjoy a tasty, moist delicious cake with no eggs or oil

use a white cake mix with a strawberry soda, chocolate cake with a coke, use your imagination!

My roommate made an eggless coffee cake using Diet Coke! It sounds a little strange, but it was REALLY good. I think it's a Weight Watchers secret (she's probably the skinniest, healthiest, fittest thing I've ever seen so I have no idea why she needed it to be eggless!) So check out their website.

Milkless, Eggless Chocolate Cake

3 cups cake flour
6 tablespoons unsweetened baking cocoa (I use Hershey's)
2 teaspoons baking soda
2 cups granulated sugar
1 teaspoon salt
2 cups water
2 tablespoons apple cider vinegar
8 tablespoons margarine, melted
2 teaspoons vanilla extract

Heat oven to 350 degrees.
Sift all dry ingredients into a large bowl.
Add vinegar to water and mix into dry ingredients.
Add margarine and vanilla, mix again.
Grease a 9 x 13" pan (use the margarine wrapper to grease the pan),lightly flour pan Pour mixture into prepared pan.
Bake 30- 35 minutes, test for doneness by inserting a toothpick in the center of the cake Cool and frost with your favourite frosting.
