Here are some, this one below I have tried, pretty simple and not bad at all ^_^

Vi's Banana Bread
* 1 tsp. baking soda
* 2 eggs
* 1 tsp. vanilla
* 1/4 c. margarine (4 Tbsp.)
* 1 c. very ripe bananas (3 bananas)
* nuts (optional)
* 1 1/2 c. sugar
* 1 tsp. baking powder
* 1 1/2 c. flour
- Mix ingredients. Grease bottom of 1 bread loaf pan.
- Bake at 350 degrees till pick tests done, about an hour. Turn out while hot. Wrap in wax paper.


Banana Bread
1 box yellow cake mix
1 package Instant Banana Cream pudding and pie filling
1/2 cup water
1/2 cup vegetable oil
2 ripe bananas
4 eggs
1 cup chopped pecans

Mix all the above together.
Bake at 350 degrees F for 40-45 minutes
2 large or 4 small pans



Banana Bread
3/4 cup of sugar
1 1/2 cups mashed bananas (3 large)
3/4 cup vegetable oil
2 eggs
2 cups flour
1/2 cup chopped nuts (optional)
1 teaspoon baking soda
2 teaspoons vanilla extract
1/2 teaspoons baking powder
1/2 teaspoon salt

1. Heat oven to 325 degrees.
2. Grease a loaf pan either 9 by 5 by 3 or 8 1/2 by 4 1/2 by 2 1/2 inches, with shortening using a pastry brush.
3. Mix sugar, bananas, oil and eggs in a large bowl with a wooden spoon. Stir in remaining ingredients. Pour into pan.
4. Bake until a wooden pick inserted in center of the bread comes out clean, 60 to 70 minutes. Let cool 10 minutes, then loosen sides of loaf from pan and remove from pan. Let cool completely before slicing. Makes 1 loaf

This is my granny's new favorite way...box of yellow cake mix, 1/3 cup applesauce, 3 ripe bananas, bake in loaf pan by temp on box till done....if you don't have applesauce use sour cream or yogurt, oil if you don't have anything else, but it won't be as moist with oil
you can add nuts too

Ingredients

* 2 cups all-purpose flour
* 1-1/2 teaspoons baking powder
* 1/2 teaspoon baking soda
* 1/4 teaspoon salt
* 1/4 teaspoon ground cinnamon
* 1/8 teaspoon ground nutmeg
* 2 eggs, beaten
* 1-1/2 cups mashed banana (5 medium)
* 1 cup sugar
* 1/2 cup cooking oil or melted butter or margarine
* 1/4 cup chopped walnuts
* 1 recipe Streusel-Nut Topping (optional)

Directions

1. Preheat oven to 350 degrees F. Grease bottom and 1/2 inch up the sides of one 9x5x3-inch or two 7-1/2x3-1/2x2-inch loaf pans; set aside. In a large bowl combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Make a well in center of flour mixture; set aside.

2. In a medium bowl combine eggs, banana, sugar, and oil. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Fold in nuts. Spoon batter into prepared pan(s). If desired, sprinkle Streusel Topping over batter.

3. Bake for 55 to 60 minutes for 9x5x3-inch pan or 40 to 45 minutes for 7-1/2x3-1/2x2-inch pans or until a wooden toothpick inserted near center comes out clean (if necessary, cover loosely with foil the last 15 minutes of baking to prevent overbrowning). Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely on a wire rack. Wrap and store overnight before slicing.

4. Makes 1 loaf (16 slices)

5. Streusel-Nut Topping: In a small bowl combine 1/4 cup packed brown sugar and 3 tablespoons all-purpose flour. Using a pastry blender, cut in 2 tablespoons butter until mixture resembles coarse crumbs. Stir in 1/3 cup chopped walnuts.

2 cups flour

**An hour and ten minutes is good. I've also used fresh bananas, just smush them good while they are still in their skin/peel. I use one large loaf pan that is about 4in high, but there is enough batter to put it in a 9x9in glas/metal pan too. I even made delicious cupcakes on a whim in 10-12 minutes at 325!

2 loaves

3 ripe bananas (mashed)
2 cups flour
1 cup sugar

2 eggs
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup shortening
1/2 cup nuts
vanilla chocolate chips

1. Preheat oven to 350 deg F.
2. Mix all ingredients together except nuts and chips in a mixer.
3. Stir in nuts and chips.
4. Grease loaf pans.
5. Pour mixture in pans.
6. Bake for about 1 hour.
7. Test with a tooth pick to see if done.
8. Will come out clean unless a chip is hit when done.
9. Hint: If banana are getting to ripe and you do not nave the time to make the bread at this time.
10. Put the bananas in your freezer unpealed to use later.
