Easy meals for one person.?

So, I'm a college kid and staying in an apartment this summer and need some recipes to try so I don't eat the same old stuff all the time.

A little more information:

I like a lot of Italian dishes; I eat a lot of chicken; I don't like most Asian foods/spices; I don't eat mayonnaise or eggs (though eggs as an ingredient are fine); I like a lot of vegetables: tomato, onion, broccoli, garlic, spinach, etc.; I'm a big fan of pasta dishes, so I'm willing to try different sauces; I don't have a grill.

I'm open to pretty much any suggestions you might have - just looking out for some new foods to try. =) Thanks.

You can get these frozen Betroli Italian dinners at the supermarket in the freezer section. They are more of a stir fry dinner, and they will feed you twice in a day if you save the leftovers. Usually enough in a bag for two people, or two servings.

Also if you like to bake, you can get a small, simple pizza crust kit. Put whatever you please for toppings, and bake to the directions on the crust package.

You can make a simple stew by getting bullion cubes, and chopping vegetables into a pot and adding water or broth and cook to your liking. Maybe even add some browned ground beef.

Sometimes if you can't scale a good recipe down, you might just freeze a portion of it for use later.

One whole, cut up chicken (or less since it's just for you). 2 small cans tomato paste, 2 small cans tomato sauce, 1 - 2 cans of corn, don't drain. Wash the chicken put it in a deep pot & add all other ingredients. Add any seasoning you like. We always use the seasoned salt. Let it come to a boil then lower the heat, cover & let simmer about an hour & a half.

My kids loved this as kids & are grown & still ask for it.

Here is one reciepe for you...

Stuffed Bell Peppers:
*what you'll need*
-fresh bell peppers(red, green, or yellow)
-fresh ground beef(like hamburger meat)
-onions(yellow or red)
-a pan for baking, a bowl for mixing
-spices of your choice for the meat(salt, pepper, garlic, etc.)
-and sauce for dipping if you choose(like bbq, A1, or ketchup)

*cooking*
-start out with fresh red, green or yellow bell peppers. cut the end of the bell pepper, and clean out the inside of it. (so that you can stuff them.)
-cut the onions in a square like shape, on the medium size.
-take the bowl, add the meat, spices, and onions(that you just cut) and place in bowl, mix well.
-stuff the bell peppers with the meat(you have just mixed) and place them on the pan for baking.

*baking time and directions*
-pre-heat oven to 350*, when pre-heat is finished; place pan with stuffed bell peppers in the oven.
-cook for about 30 mins...or until meat looks brown, and bell peppers are soft and lightly golden brown.

when bell peppers are done, let stand for 5 mins...before you attempt to eat them(they are hot!) enjoy with your favorite dipping sauce or by themselves.

alternative-
you can also place stuffed bell peppers in a pot of boiling water standing upright. cook for 30-40 mins. and check the meat, and bell peppers to determine if done and ready to eat.

You could do Chicken Parmesan:

Chicken breast (however many you're going to eat)
1 egg
2 tbsp milk
1/4 cup Breadcrumbs - The kind with italian seasoning mixed in
1/8 cup shredded Parmesan cheese.

1/4 cup vegetable oil

Heat oil on medium heat in frying pan.
Mix breadcrumbs and parmesan in a small bowl.
Beat egg and mix in milk in small bowl.
Dip the chicken in the egg and coat both sides.
Coat chicken in breadcrumb mixture.
Fry chicken for approximately 8 minutes per side.

You can also put on a little store bought spaghetti sauce if it comes out a little dry.

This also works great with Eggplant!
