Absolutely not. Chicken can be fried with no coating. You can also use a light coating of flour or corn meal to give it that fried chicken crust. To use flour or corn meal, dip the chicken pieces in a water/milk mix to get it wet then cover in flour (or just sprinkle with flour for a lighter coating). Then fry as usual.
