Veggie week-any tips for a novice?

Just read somewhere that it's veggie week. I am not a vegetarian but I often enjoy veggie food. Love all pulses and most vegetables and would love a QUICK and EASY recipe for something atsty with lentils/pulses etc?

Thanks for the lentil recipe. I am never sure which lentils you have to soak and which you don't. Love puy and brown lentils but hate having to soak first. Am I doing this unnecessarily?

you are to be commended for noticing it's veggie week and enjoying veggie food!

i like this recipe for lentils with onion and carrot and it's really simple. the carrot makes the lentils taste quite sweet too.

in a medium sized pot, gently fry an onion. after about 5 minutes, add chopped carrot and leave to cook for a few minutes.
add lentils - i like the green le puy lentils - (in the quantity you desire, remember dried lentils double in size so half a cup of dried becomes a cup of cooked) and add stock or water to cover. leave about a centimetre or two of water at the top so that the lentils can cook.
leave to simmer for 15-20 minutes or until the lentils are cooked to the consistency you like.
make sure you check the lentils every so often to see if the water or stock is getting too low. you don't want the lentils to burn after all!

can be served with rice, pasta, cous cous, or just a nice salad! very versatile and tasty - hot or cold!

Tescos have a fab frozen veggie range. Burger, sausages, veggie fingers etc

Don't have any for lentils/pulses, but quorn is great with pasta and a tomato based sauce with lots of veg, its really god and very easy to cook, ps the only thing i could recomend would be a soup.

Lentles and Spinach soup.
Boil lentles, in veg stock, remove half of the lentles once boiled. chopped spinach throw it in last minite, blend till thick add back the whole lentles you set aside whole lentles add a dash of hot sauce and a dollop of sour cream,

YOu should also add some of the spices you like.. I like garlic, and cumin.
