To the first two answers... you're using wet measurements when you do the "2 cups (8 ounces) = 16 ounces", so that's not neccesarily a pound in weight...

Cups measure volume, not weight, unless you're measuring water or a liquid of similar viscosity. An accurate standard conversion of dry materials is impossible, since everyone packs a cup differently and different sugars have a different density. Your best bet would be to use a kitchen scale for an accurate measurement.

1 C = 8 oz
1 lb = 16 oz
2 C = 1 lb

it varies depending on how much air is in the sugar. for instance sifted sugar it will have more volume than non-sifted.

approx 4 cups.
