Recipes for scalloped onions?

I had scalloped onions once and it was sooo good, does anyone know a recipe? I cant find any on the net

SCALLOPED ONIONS, LEEKS, AND SHALLOTS

Serves 8.

3 pounds onions, cut into 1/4-inch-thick slices
the white and pale green parts of 2 pounds (about 6) leeks, split lengthwise, washed well, and chopped
1/2 pound shallots, cut into 1/4-inch-thick slices
1/2 stick (1/4 cup) unsalted butter
1/4 cup heavy cream
1 cup coarse fresh bread crumbs
1 cup grated extra-sharp Cheddar (about 1/4 pound)
1/4 teaspoon paprika preparation
In a heavy kettle cook the onions, the leeks, and the shallots in the butter with salt and pepper to taste, covered, over moderate heat, stirring occasionally, for 10 minutes, reduce the heat to moderately low, and cook the vegetables, stirring occasionally, for 10 to 20 minutes more, or until they are soft. Remove the lid and cook the mixture over moderate heat, stirring, for 3 to 5 minutes more, or until the excess liquid is evaporated. The onion mixture may be made 2 days in advance and kept covered and chilled.
Preheat the oven to 375°F. Transfer the onion mixture to a 2-quart shallow baking dish and stir in the cream. In a small bowl toss together the bread crumbs and the Cheddar, sprinkle the mixture evenly onto the onion mixture, and dust it with the paprika. Bake the onion mixture in the middle of the oven for 20 to 30 minutes, or until the cheese is melted and the mixture is bubbly.

Scalloped St. Augustine Sweet Onions

6-8 servings

3 tablespoons butter or margarine
3 medium sweet yellow onions, sliced
1/4 cup chopped green sweet peppers
2 tablespoons chopped pimiento
3 ounces process swiss cheese, torn
1 cup finely crushed saltine crackers (28 crackers)
2 eggs, beaten
3/4 cup half-and-half or light cream
1/2 teaspoon salt
1/8 teaspoon ground black pepper
2 tablespoons butter or margarine, melted

In a large skillet, melt the 3 tablespoons butter or margarine over medium heat.
Add onions and sweet pepper; cook and stir about 5 minutes or until tender.
Remove from heat.
Stir in pimiento.
Place half of the onion mixture in the bottom of a 2-quart square or oval baking dish; spread evenly.
Sprinkle with half of the cheese, then half of the finely crushed crackers.
Top evenly with remaining onion mixture, then remaining cheese.
In a medium bowl, combine the eggs, half-and-half or light cream, salt, and black pepper.
Pour over layers in baking dish.
In a small bowl, stir together the remaining finely crushed crackers and the 2 tablespoons melted butter.
Sprinkle over layers in dish.
Bake, uncovered in a 325 degree oven about 25 minutes or until set in center.
Let stand for 10 minutes before serving.

INGREDIENTS:
3 cups cooked onions
2 cups oyster crackers
1/2 cup buttered crumbs
3/4 cup sweet milk
2 eggs
3 tablespoons butter
salt and pepper to taste
PREPARATION:
Slice or quarter onions. Boil until done. Into a baking dish put a layer of onions, butter, salt, and pepper. A layer of broken crackers, more onions and crackers, until all are used. Heat milk just to lukewarm. Mix milk and eggs together; pour over the mixture then cover top with buttered crumbs. Bake at 325° just long enough to set the milk and eggs and brown top, about 30 to 40 minutes. Serve from the dish in which it was baked. Serves 4 to 6.

Scalloped Onions:

1 hour 40 min prep
8 servings
1 casserole

3 lbs of small boiling onions
1/4 lb premium saltine crackers, 1 pack
1/4 lb butter
salt and pepper
1 1/2 cups milk (approximately)

1. Boil the onions for about 10-15 minutes; drain.
2. In a 2 qt casserole, layer half the onions, half the crushed saltines, salt and pepper to taste, and half the butter, cut into chunks and dotted over the top.
3. Repeat the layers.
4. Cover with milk, just enough that it comes to the top layer of onions but not over the top of them.
5. Bake uncovered at 350 degrees for about 20 minutes until browned.
