'Home-made' where demi-glace is concerned, gives no idea how long and how carefully you have been prepared to pare down the fond (stock) for in time, and therefore a judgement call on its keeping qualities is impossible. Freeze what you've got in portion sizes to suit your kitchen practice -- how often you need it, in what quantity. *Don't* keep and 'reboil' it periodically. You'll destroy what you've worked hard for to achieve. The fonds in a professional kitchen live by two things, assiduous preparation and *turnover*. The last one is where it comes unstuck in a private kitchen, Sad, but true... Freeze it. :-/
