is it ok to just use one egg? Thats all we have

the egg is usually what holds the mix together as it cooks. Use less liquid....... or borrow an egg from neighbor, okay?

Yes Just Substitute the Other Eggs With Some Applesauce :)

Probably, maybe add a little more oil though. So it will be moist.

if it says two eggs, one should be just enough

If you have applesauce around, use the one egg and some applesauce to make up for the lacking egg.

DEPENDS ON HOW MUCH FLOUR YOU USE,IT WILL NOT RISE IF NOT ENOUGH EGGS ARE PUT IN.
