Beef Stroganoff, in its modern American form, is dish of strips of beef filet with a mushroom, onion, and sour cream sauce. It is served over rice or noodles. There are many variations.

Recipes of braised meats finished with sour cream are fairly typical of medieval Russian cookery.[citation needed]

Elena Molokhovets' classic cookbook (1861) gives the first known recipe for Govjadina po-strogonovski, s gorchitseju 'Beef Stroganov with mustard' which involves lightly floured beef cubes (not strips) sautéed, sauced with prepared mustard and bouillon, and finished with a small amount of sour cream: no onions, no mushrooms. A 1912 recipe adds onions and tomato paste and serves it with crisp potato straws, which are considered the traditional garnish in Russia.[1] The version given in the 1938 Larousse Gastronomique includes beef strips, and onions, with either mustard or tomato paste optional.

After the fall of Imperial Russia, the recipe was popularly served in the hotels and restaurants of China before the start of the Second World War. Russian and Chinese immigrants, as well as U.S. servicemen stationed in pre-socialist China, brought several variants of the dish to the United States, which may account for its popularity during the 1950s. It is commonly served with noodles or rice.


Beef stroganoff can also be made from adding water to prepackaged dry mixes (here a Norwegian stroganoff product)It is also very popular in Brazil (where it is better known as "strogonoff" or "estrogonofe"), but the recipe is slightly different there, with tomato sauce added to the cream, and strips of chicken breast commonly replacing the beef. Also, the dish is commonly served with rice and potato chips.

The dish is also popular in Sweden and Norway. In Sweden, it is known as sausage stroganoff, which uses the domestic product falukorv as a substitute for the beef. Beef stroganoff is however also a common dish.

This is apparent also in many international variations of the dish, where tomato sauce, ketchup, mustard, thickening and other ingredients has been added depending on where it is served.

It is very popular as a basic food service dish as it is very easy to produce in large quantities.

TIMING Tidbit: Slice and place meat in freezer 15 minutes. Sauce and meat are prepared 10 minutes before you are ready to serve.


1 1/2 pounds beef tenderloin fillet
Salt and pepper
3 tablespoons butter, divided
2 tablespoons all-purpose flour
2 cups beef consomme, available on soup aisle
2 teaspoons prepared Dijon style mustard
1/4 cup sour cream, eyeball it
1 tablespoon extra-virgin olive oil or vegetable oil, 1 turn of the pan in a slow stream
1/2 small onion, sliced
1 pound extra wide egg noodles, cooked to package directions


Slice meat into 1/2-thick by 2 -nch long very thin strips and season with salt and pepper. Set in freezer.
Heat a skillet over medium heat. Melt 2 tablespoons butter and cook with flour 1 minute. Whisk in consomme. Thicken 1 minute. Stir in mustard and sour cream, thicken 2 to 3 minutes. Remove from heat and season sauce with salt and pepper.

Heat a second skillet over high heat. Add 1 tablespoon oil and 1 tablespoon butter, then add the meat and onion and cook over high heat until brown on both sides, 3 to 4 minutes total.

Arrange meat on a bed of egg noodles and top with Stroganoff sauce and parsley.

It is strips of sirloin steak prepared with mushrooms, sour cream and white wine. Normally it is served on noodles, but rice works well.

Beef Stroganoff is sirloin tip or stew beef, creamy sauce, and egg noodles. When I make it, to help save time, I use the McCormick brand "Beef Stroganoff" packaged seasoning, and it's quite good. When you use the packaged spice seasoning mix, all you need is a pound of the sirloin tips or stew beef, a cup of water, the seasoning package, a cup of sour cream, and some cooked egg noodles. If you want to make the sauce extra creamy and rich, brown/cook the beef with some butter and then add the water and seasoning mix. It's really good.

ITS A STEW MADE WITH FILLET STEAK AND MUSHROOMS AND CREAM,IT IS VERY GOOD.

I would describe it as a beef & mushroom stew in a sour cream gravy. My suggestion ,don't be put off by descriptions,try for yourself,makes a nice variant from usual beef dishes.

This is how I cook it:
Saute some lean diced beef and when almost done add some fine diced onion,a little minced garlic and minced shallots,some sliced fresh mushrooms and 2 tablespoons of finer diced green onions. When that is nice and brown add about a half cup of sherry wine,let it reduce a little and add about a cup of brown beef sauce (gravy) with about a half cup of sour cream. Cook it until the sauce thickens enough to hold its shape a little. You can add salt and black or white pepper to taste. Serve over rice or some sauted fettuccine noodles

It's beef in a sour cream sauce served over noodles and it is wonderful. This recipe is extremely easy to make. I use tenderloin but any good cut of beef can be substituted.

BEEF STROGANOFF

2 tablespoons of flour
1 teaspoon of salt
3 pounds of beef tenderloin, cut into 1/4 inch wide strips
4 tablespoons of butter
2 cups of mushrooms, sliced or diced
1 cup of onions, chopped
2 cloves of garlic, minced or pressed

4 tablespoons of butter
6 tablespoons of flour
2 tablespoons of tomato paste
2 cans of Campbell’s beef consomme
2 cups of sour cream
4 tablespoons of sherry
wide egg noodles (Creamette Brand curly short noodles)

Combine together 2 tablespoons of flour and 1 teaspoon of salt. Dredge meat in mixture. Heat skillet and add 4 tablespoons of butter. When melted, add meat strips and brown quickly, flipping meat to brown all sides. Add mushrooms, onions and garlic. Cook 4 minutes, until onion is barely tender. Remove meat and mushrooms from skillet.

Sauce - Add 4 tablespoons of butter to drippings in the skillet. Blend in 6 tablespoons of flour and 2 tablespoons of tomato paste to the drippings and cook for 1-2 minutes. Slowly add in 2 cans of beef consomme stirring constantly, stir until smooth. Cook until thick. Add meat, mushrooms, sour cream and sherry. Serve over noodles.
