Does anyone have any easy vegetable bake recipes?

I have zucchini, cauliflower, carrots, and sweet potato and wanted to do something nice to go with my sausages instead of plain old mash.

Baked Potato Casserole
8 small Potatoes, cooked and cubed
1/2 pound American Cheese, sliced into strips
1 cup Mayonnaise
1 Onion, chopped
Salt and Pepper to taste
6 slices Partially Fried Bacon, cut
1/4 cup Sliced Stuffed Olives
Combine first potatoes, cheese, mayonnaise, onion, and spices. Place in a 13x9-inch baking pan. Top with bacon and olives. Bake, uncovered at 325° for one hour.
Serves 6.

Sweet Potato Delightful
1 can apple pie filling
2 large or about 4 medium cooked sweet potatoes, sliced
1 cup whole cranberry sauce
2 tbsp orange marmalade
2 tbsp apricot preserves
In a lightly buttered 8" square baking dish or casserole layer apple pie filling then sliced sweet potatoes. Mix cranberry sauce with marmalade and preserves. Spoon over potatoes. Bake at 350° for 20-25 minutes. Serves 4.

Plantation Casserole
An easy and tasty vegetable casserole with a little bacon for crunch and extra flavor.
1 can (approx. 15 ounces) green beans, drained, about 2 cups
1 can (approx. 15 ounces) carrots, drained, about 1 1/2 to 2 cups
1 can (approx. 12 to 15 ounces) corn, drained, about 1 1/2 to 2 cups
1 can (10 3/4 ounces) condensed cream of mushroom soup
6 to 8 slices bacon, cooked and crumbled
1/4 teaspoon pepper
Biscuits
3/4 cup cornmeal
1 1/2 cups all-purpose flour, sifted before measuring
1 tablespoon baking powder
1 teaspoon salt
1/3 cup shortening
2/3 cup milk

Preheat oven to 425°.
Combine drained or thawed vegetables, soup, bacon, and pepper in a 2-quart casserole. Place in oven and bake for 10 minutes while preparing biscuits.
Sift together the cornmeal, flour, baking powder, and salt. Cut in shortening until mixture resembles coarse crumbs. Add milk and mix just until mixture is moistened. Turn out onto lightly floured surface and knead for a couple of seconds. Roll out to 1/2-inch thickness and cut with a biscuit cutter or doughnut cutter. Arrange over the hot casserole and bake for 12 to 16 minutes longer, until biscuits are hot and browned.
Serves 8.

Bake the sweet potato till tender. Cut all vegs in slices or cubes and spread in a baking pan (if you want, cut the sausages too and add them in). Mix two eggs with salt, pepper and half cup of milk and pour over vegs. Bake till firm!

If you have rice and cheese, melt the cheese, add the veggies and then the rice and sausage and bake for 1 hour, I can get my kids to eat any vegetable if I add cheese!

Here's a simple recipe cut an onion in half so you can hollow it out! dice up the innards.. mix with some creamed
corn and whatever veggie leftovers you might have. fill the hollowed onion halfs.. cover with a cabbage leaf top with a slice of cheese and an olive. Bake briefly in a microwave oven. Delicious. For added flavour add a hint of habenaro barbecue seasoning.. which is amazing.. I got this at a Healthfood store. Saw this seasoning once at Safeways!
These stores only get the hot stuff in when they know the customers that are looking for hot stuff are coming! At Safeways it's at Christmas time! Springtime at IGA, Overwaitea stores, Health Food stores have it other times!
note if you have no left overs.. just make a bit of coleslaw or get those prepared coleslaw pkgs found in stores use this instead of leftovers!

put them in a baking dish, pour over cream mixed with french onion soup mix, sprinkle with grated cheese, bake for about 30-45 mins

Vegetable Bake
BATTER
100g Plain flour
2 Eggs, beaten
2 Dl milk
2 tbsp Wholegrain mustard
2 tbsp Vegetable oil
FILLING
2 tbsp Olive oil
2 Garlic cloves, crushed
1 Onion, cut into to eight
75g Baby carrots cut in 2, lengthwise
50g Green beans, cut in half
50g Tinned sweet corn, drained
2 Tomatoes, seeded & diced
1 tsp Wholegrain mustard
1 tbsp Chopped mixed herbs
Salt & pepper
Preparation

Warm the oven to 200C/390F

BATTER: Sift the flour and a pinch of salt into a large bowl. Make a well in the centre and whisk in the egg and milk until it becomes a batter. Stir in the mustard and set the mixture aside. Pour the vegetable oil into a low ovenproof dish and put it in the oven for 10 minutes.

FILLING: Warm the olive oil in a frying pan. Sauté the garlic and onion for 2 minutes. Cook the carrots and beans in a pot of boiling water for 7 minutes. Drain them well. Add the corn and tomatoes to the frying pan. Stir in the mustard and herbs. Add the carrots and beans. Take the ovenproof dish out of the oven and pour in the batter. Make sure it completely covers the bottom of the dish. Lay the vegetables on top and put the dish back in the oven for 30-35 minutes or until the pastry has risen and is crisp and fluffy. Serve immediately.
Cook's Notes

It's important that the vegetable oil in the ovenproof dish is hot before the batter is poured in so that the batter begins to cook and rise immediately.
