Fettuccine Carbonara
Serving Size : 4

5 eggs
3/4 cup grated Parmesan cheese
2 tbsp finely chopped fresh parsley
12 1/2 oz dry fettuccine
2 tbsp butter
2 cloves garlic, minced
1/2 lb sliced fresh mushrooms
1/2 cup light cream
Salt and freshly ground pepper, to taste

Beat together eggs, Parmesan cheese and parsley until eggs are just blended. Cook fettuccine al dente, in boiling salted water. (Do not cook ahead.)

Meanwhile, heat large skillet over medium-high heat. Add butter. When melted, add garlic and mushrooms. Saute until golden brown, about 3 minutes. Add cream and heat without boiling.

Drain pasta in a colander, without rinsing. Return to cooking pot immediately. Add both mushroom and cream mixture and egg and cheese mixture. Toss until eggs thicken and coat fettuccine, 1 to 2 minutes. Season to taste with salt and pepper. Serve immediately.

same as cooking spagetti procedure, it's just the sauce is white

SPAGHETTI CARBONARA

mushroom
pineapple tidbits
bell pepper
mixed vegetables
all purpose cream (pack)
Nestle cream (can)
spaghetti (pasta)
ham
ground pork
onion, garlic, pepper, salt, butter
melt cheese
milk (evaporated)
flour

Put butter into pan; add garlic, onion until brown. Put the ground porkand ham. Saute until brown. Add cheese.
When the cheese is melted, add mixed vegetables, milk, nestle cream, bell pepper, all purpose cream, pepper and salt.

When it reaches a boil, dissolve the flour in, a little bit at a time until when it has thickened to desired consistency.

Here's how I make it. Cook up about a half a pound of bacon. Maybe a little more. Crumble it up. Scramble six eggs. Heat up the bacon grease. Throw your drained but still hot pasta back in the pot. Throw in the bacon, eggs and grease with a big handful of parmesan. Toss it real fast. Cover it up and let it sit for a minute or so. Sometimes I make my own version with turkey bacon and butter. Some people recommend a heated bowl. I don't see the purpose. Do what YOU like. Enjoy!

for two orders:
Saute about three slices of bacon coarsely diced. When it is about half done add 2 tablespoons of diced onion,not quite as big as the bacon. You can also add a little minced garlic but you don't need it.When that is finished add about two cups of whipping cream(I prefer to use half and half because it thickens too much with the cream) When it is bubbling hot add about half of a one lb.package of al dente(slightly undercooked)fettuccine (well drained of water)to this mixture plus coarse ground black pepper to taste. mix in a half cup of grated parmesan and serve with a little parmesan sprinkled on the top. If you want to ease your conscience with this grossly unhealthy dish,use spinach fettuccine.
