A recipe for egg fried rice must be healhty?

"Healthy" Fried Rice
1 cup brown rice (best if 1 day old)
2 tablespoons olive oil
1/2 cup cooked peas
1/2 cup cooked chopped carrots
1 cup broccoli florets
3/4 cup sliced mushrooms
1 egg, beaten
soy sauce, to taste
1. Heat 1 tbsp oil in pan and sautee mushrooms until browned.
2. Remove from heat.
3. Heat remaining oil in pan and add rice.
4. Add egg and mix until rice is thoroughly coated with egg.
5. Cook for 5-10 minutes on high, or until egg is lightly browned.
6. Combine rice mixture and vegetables in large bowl and stir until vegetables are well mixed.
7. Add soy sauce to taste and serve.

it's the quality of the egg that's important. Eggs bought in supermarkets and coming from intensive breeding are normally very rich in Omega 6, while eggs brought directly from a small farmer who lets the hen free will be richer in Omega 3. It all depends on how hens are fed.
i couldn't tell you specific recipes, but there are alternatives that you can use. egg whites only...that cuts out most of the cholesterol. you can use low sodium soy saunce instead of the regular soy sauce. and you can also cut back on the amount of salt that you put into the fried rice as well.
Boil a third of a cup of brown rice, fry it in a little oil, add spices, add an egg, stir well, fry until good to eat.
