I need a foolproof BROWNIE RECIPIE!!! Please....?!


Question:

I need a foolproof BROWNIE RECIPIE!!! Please....?

I′m Canadian and I live in Germany. I REALLY miss good homemade brownies. I′m actually a very good baker, but for some reason, I can′t find a brownie recipie that will give me the same results here that I had in Canada. I know the flour here is a bit different, but I haven′t had any other troubles using Cdn recipies (and I bake A LOT).
Who can give me a recipie that won′t end up mushy or too dense? I′ve tried sssoooooo many, I′d already given up. You are my last hope!!! Ha ha! (just joking - don′t start worrying yet).
(Actually, there is a package from Dr.Oetker which is great, but small and expensive, and as anyone knows, homemade is always better.....)

Oh- I′d really like it if things were in metric - as far as ounces vs. grams go (using "cups" is no problem).
I prefer using cocoa, but melting chocolate would be ok, if I know how many GRAMS :-)

The Ultimate Brownie

INGREDIENTS:

* 8- 1 ounce squares of unsweetened chocolate
* 1 cup butter
* 5 eggs
* 3 cups sugar
* 1 tablespoon vanilla
* 1-1/2 cups flour
* 1 teaspoon salt
* 2-1/2 cups chopped pecans or walnuts, toasted

PREPARATION:
Preheat oven to 375 degrees F. Grease a 9 x 13 pan.

Melt chocolate and butter in a saucepan over low heat; set aside. In a mixer, beat eggs, sugar and vanilla at high speed for 10 minutes**. Blend in chocolate mixture, flour and salt until just mixed.
Stir in the nuts. Pour into prepared pan.

Bake for 35-40 minutes. (Don't overbake.) Cool and frost if desired, but that is not necessary.

** It's not required, but this is when it's very nice to own a stand mixer.



Mrs. Quinn's Easy Brownies --fudgy

INGREDIENTS:

* 3/4 cups melted butter
* 1-1/2 cups sugar
* 1-1/2 teaspoon vanilla
* 3 eggs
* 1/2 cup cocoa powder
* 3/4 cups flour
* 1/2 teaspoon baking powder
* 1 teaspoon salt
* 1 cup chopped, toasted nuts
* 1 cup semi-sweet chocolate chips

PREPARATION:
Heat oven to 350 degrees, grease a 13x9" pan. Beat butter, eggs, sugar, vanilla in a large bowl. Mix in cocoa, flour, baking powder and salt. Stir to combine. Stir in nuts and chips. Pour into pan.Bake 20-22 minutes.

Someone already gave you the Ultimate Brownie Recipe I was going to give you. However, here are a few hints from another recipe site.

Classic Brownies
The Problem: Either pale, dry, and cakey or cloyingly sweet, the initial recipes we tried were all lacking in substantial chocolate flavor.

The Goal: We wanted an old-fashioned brownie, but one that had serious chocolate flavor. We wanted the brownies we enjoyed in our youth--Mom's brownies--but altered to cater to adult tastes.

The Solution: Use cake flour for tender brownies with a delicate chew and add baking powder to lighten the crumb. Use plenty of unsweetened chocolate for maximum chocolate flavor--not too sweet, with profound chocolate notes. Be sure to bake for the right amount of time--too short and the brownies will be gummy and underbaked, too long and they will be dry. Finally, if you like nuts, toast them and top the brownies just before baking; baked inside the brownies, they steam and get soft.
