I use just Aunt Jemima Pancake mix & add blueberries to the pancake batter after I pour it on the skillet. Then I flip it over.

Or in the summer make a fruit salad of fresh peaches strawberries blueberries & cantaloupe cut up into small pieces & just spoon over the top of the stack!

Or make a spread of cream cheese softened fresh strawberries & 1/2 tsp vanilla & mix thoroughly & use as a spread on bagels or french toast yum!

Here is one you can use.

step 1 you need fruit it can be any fruit you choose
step 2 you need to find someone named jack now it can be any jack so you choose
step 3 we fold flap a across to flap c this will contain the fruit
step 4 fold flap b to flap d be very careful as this contains the jack and he needs some air holes
step 5 stick all together with some glue

Banana Fruit Flap Jacks
* 8 oz porridge oats
* 6 oz mixed dried fruit
* 2 tablespoons fruit juice
* 2 large bananas
* 2 tablespoons granulated sweetner



Flapjack Recipe Instructions

Soak the dried fruit in the fruit juice for 3o minutes. Mash the bananas, add the soaked fruit and sweetner. Mix in the oats. Line a 8“ square tin with baking parchment. Place the mixture in so level with the top. Bake in medium oven for 20 minutes. Cut into small flapjacks, leave to cool.

Fruity FlapJacks

You will need:

4 tablespoons golden syrup
200g brown sugar
250g butter
350g oats
150g mixed dried fruit, like cherries, cranberries, apricots or prunes (chopped if necessary)
Optional: 3 pieces of stem ginger, finely chopped


Method:

1. Preheat the oven to 150°C/300°F/gas 2. Lightly butter a 20 x 30cm (or similar sized), 4cm deep baking tray.

2. Put the syrup, sugar and butter into a large saucepan. Place on a medium heat until the butter has melted and everything is bubbling and caramel-coloured. Take the pan off the heat and stir in the oats, dried fruit and stem ginger. Pour the mixture into the baking tray and press it down with the back of a wooden spoon to make it smooth and flat.

3. Bake in the preheated oven for 40 to 45 minutes. Leave to cool in the tin for 15 minutes before cutting into portions with a sharp knife. Don’t take the individual flapjacks out of the tray yet, though; leave them until completely cool then use a fish slice or spatula to get right down to the bottom of the tray and lift them out.

Ingredients
3/4 cup flour
1/4 teaspoon salt
3/4 cup light cream
3 Tablespoons sugar
3 eggs
Fruit, 2 kinds that complement each other (peaches & blueberries, pears & raspberries, or apples & raisins)
1/2 teaspoon cinnamon

Mix together flour, sugar, salt, eggs, and cream in a medium bowl with a whisk. Heat four 6-inch skillets and brush lightly with oil in prevent sticking. Ladle batter into each skillet, watching closely that the bottom of the pancake does not burn. Cook until set, just lightly brown on the bottom of the pancake, over medium heat. Remove from heat and arrange fruit on top. If using fresh, make sure it's ripe and if using can, drain well. Combine the brown sugar, and cinnamon and sprinkle on top. I use 1/4 teaspoon ginger when using the pears. Bake in a 400-degree oven for 7 to 9 minutes. Serve warm.
