Looking for a Carribean Chicken with Banana Shish Kabob Recipe?

I ate this great shish kabob in a restaurant that is no longer in business. I think it was Jamaican style boneless grillled chicken wrapped in bacon and chunks of onion and bananas on skewars. Would like to know if anyone knows the recipe or anything like it. Looking for the seasonings, and dipping sauce if possible or anything close to this. Thanks

This may not be exact, but it sounds close. Enjoy!

4 skinless, boneless chicken breast halves, cut into chunks to fit on skewers
8-10 slices of bacon
2 sweet chopped onions like vidalia, yellow or bermuda
1 jalapeno chile, seeded and minced
1 tablespoon minced, peeled fresh ginger
2 tablespoons apple cider vinegar
3 tablespoons fresh Key lime juice
2 tablespoons Worcestershire sauce
1 tablespoon plus 1 teaspoon vegetable oil
1 teaspoon ground allspice
1 teaspoon basil
1/2 teaspoon plus 1/8 teaspoon kosher salt [if possible - it is coarser]
1 cup of sliced bananas
1 cup of pineapple cubes (fresh if possible)
1 cup of mango cubes (fresh if possible)
1 cup of fresh tomato chunks
1 red pepper, cut into 1-inch strips
1 green pepper, cut into 1-inch strips
PREPARATION:
Make the marinade. In blender or in food processor process onions, jalapeno, ginger, vinegar, 2 tablespoons Key lime juice, Worcestershire, 1 tablespoon oil, allspice, basil, and 1/2 teaspoon salt until a thick paste forms.
Place chicken in small bowl or in ziptight plastic bag and add marinade mixture, turning the chicken until it is completely coated.

Cover bowl or seal bag and refrigerate chicken 1 hour to marinate.
In the meantime, in small bowl, toss bananas, pineapple, mango, tomato and red and green peppers with remaining 1 teaspoon oil, 1 tablespoon Key lime juice and remaining 1/8 teaspoon salt.
Preheat grill or broiler.
Wrap chicken chunks with 1/2 strips of bacon. On four metal skewers, alternately thread chicken, banana, pineapple, mango, tomato and pepper pieces.
Place kabobs on grill or on a rack in broiling pan. Brush kabobs with any remaining marinade. Broil kabobs 10 minutes. Turn and broil until chicken loses its pink color throughout, about 5-10 minutes longer. Makes 4 servings.

Instead of banana try plaintains. Banana's over a grill would not work out well at all.

It says it serves 30, so I'm thinking you'll have to cut the recipe way down unless you are serving a party!
