Good choice. My favorite is a little time consuming and sounds odd, but the outcome couldn't be better.
4 tbsp. Sugar
2 tsp. Salt
2 tsp. Pepper
1 tsp. Garlic Powder
Rub half the mixture on one side of the steaks, let sit for one hour at room temperature. Turn steaks over and add remaing rub to other side, let sit another hour. Grill and enjoy.
Like I said, sounds odd, but this is the best steak recipe I've EVER had.
You could buy some marinade, whatever flavor you like. Salt and pepper the steaks and let it sit in the marinade. Most you only need to let sit for about 30 mintues, but the longer the better. Also, with the marinade and stuff...instead of grilling the steak directly, you could wrap the steak in aluminum foil with peppers and other veggies. Then just let them cook until they are way you like em...i.e. med rare etc
ohhh-weeee-cookie, Orange juice let stand for two hours, pat dry season salt and pep. can I come over for lunch I will pick up a bottle of wine, Please Please please Please.
excellent choice. i love them and are the only ones that i buy. i like to season them up with a lot of garlic, some salt, black pepper, and olive oil.
i sear the steaks on both sides until they are medium-well. i also like grilled onions and mushrooms too....oh, and a baked sweet potato with lots of butter on the side.
enjoy!
Take a Gallon size Ziploc baggie,
mix Worcestershire sauce, garlic (i love garlic and usually put about 2 to 3 cloves and you can use whole or crushed, a couple of tbs of butter, pepper, a dash of Tabasco.
Put steaks in and let marinade over night or at least 4 hours.
Gives great flavor to steak and helps make them real tender.
I promise, you will love this.
Oh, I sometimes add a tsp or two of A-1 Steak Sauce.
if you want you can do a marinade, so many to easily choose from store, or spice up yourself. Take a look thought at the big steak houses--do they marinade--NOPE! I am in CHicago, some of the TOP steak houses in the country.
#1 The meat itself1 (good quality, angus,...)
#2 they simply spice it, course sea salt, ground pepper corns.
-some options they give, are garlic, rolled in black pepercorns, or blue cheese on top. simple, but effective, lets you taste the steak.
also flip it only once. this way you sear each side, get the lines of grill too. This keeps the juices in too, too many flips, make it tougher.
good luck & enjoy, but remeber, its all in the beef!
sautee' up some onions, & nice mushrooms, just in olive oil, serve on top, or as a bed.
add a couple sprigs of asparagus to garnish the plate, it'll add the finishing touches.
(you'll need a potatoe too. Either, baked, double baked, a nice mashed, garlic mashed, or diced potatoe.)
Dont forget to pair up with a nice bottle of red wine.
Try a bottle called, Capolla, Claret(@$20). An excellent choice with the rib eye. Makes all the difference. If your budget doesnt fit, Yellow Tail is a cheaper alternative, but decent, ($9)
A good steak, like a nice marbled ribeye shouldn't need to be marinated....the flavor of the meat should stand up on it's own.
I would go simple, rub a clove of garlic all over the meat, then rub on some butter, season with salt and pepper and grill 'em up!
If by "recipe" you mean how do I prepare steaks for grilling, it's fairly simple: salt and pepper. You might want to write that down.
High-quality steaks (ribeyes, porterhouse, NY strips, etc) don't need any special preparation. If you have a favorite Dry Rub, that'll work, but PLEASE don't marinate the steaks. Marinating may add flavor, but for a thin cut like a steak, it will dry the meat out. Besides, you want to taste the steak, not the marinate.
Just rub the steak (both sides) with some vegetable oil---olive oil, cooking oil, whatever you've got. Then, sprinkle the steaks with salt and pepper (and/or your dry rub), both sides, IMMEDIATELY before they go on the grill. This is more important than it sounds; the salt will draw some moisture out of the meat, and bring it to the surface. The water acts as a heat barrier, so your steaks will actually get cooked by steam, rather than dry heat. The less time the salt has to act, the better.
I like to make a maranade of soy sauce, pinapple juice with pinapples, apricot jam, finely diced yellow and green bell peppers, and black pepper. Reduce down to thick sauce and cool- marinade meat overnight in sace. Reserve some on the side to dip and also brush onto the meat while cooking.
Soy sauce and lemons. That's it.
We like T-bones best at our house, but to each his own. A rosemary marinade is nice, here's one from cooks.com. Or just grill them plain and serve with sliced mushrooms sauteed in butter and minced garlic.
MARINADE:
1 tsp. salt
1/4 tsp. black pepper
1/4 tsp. basil
1/4 tsp. rosemary
1 clove garlic, chopped
1 med. onion, chopped
1 1/2 tbsp. wine vinegar
3 tbsp. salad oil
Marinate for least 2 hours. Broil or grill. Turn, brush with remaining juices, and broil or grill.
Side dishes: grilled corn on the cob, fresh crusty bread and butter, a big green salad, or potato salad is good too. I make mine with small red potatoes, dill, salt and pepper, sliced hard boiled eggs, and mayo to taste.
The above is our traditional Father's Day menu. Delicious!
Marinate them in Worcestershire sauce, pepper and a touch of olive oil for about 2 hours on each side. While grilling, baste with marinade.
