Grilled Sweet Potato Salad Recipe

2 1/2 pounds sweet potatoes
1/4 cup olive oil
1 teaspoon salt
1 small jalapeno pepper, diced fine
1 teaspoon ground cumin
1 scallion
2 teaspoons fresh lime juice
lime wedges
1/4 cup fresh coriander leaves


In a large saucepan, cover potatoes with salted cold water by 1 inch and simmer, covered, until just tender, about 15 to 30 minutes, depending on size of potatoes. In a colander drain potatoes and cool to warm. With a sharp knife peel potatoes and cut cross-wise into 1/2 inch-thick slices.
While potatoes are boiling, prepare grill. In a small bowl whisk together oil, salt, jalapeno pepper and cumin and brush some onto both sides of potato slices, reserving remaining cumin oil. Grill slices on an oiled rack set 5 to 6 inches over glowing coals until golden brown, about 1 minute on each side, and transfer with tongs to a platter.

Thinly slice scallion diagonally and sprinkle over potatoes. Whisk lime juice into remaining cumin oil with salt and pepper to taste and drizzle over potatoes. Serve potato salad with lime wedges and sprinkle with coriander.

German Potato Salad

3 cups diced peeled potatoes
4 slices bacon
1 small onion, diced
1/4 cup white vinegar
2 tablespoons water
3 tablespoons white sugar
1 teaspoon salt
1/8 teaspoon ground black pepper
1 tablespoon chopped fresh parsley

DIRECTIONS
Place the potatoes into a pot, and fill with enough water to cover. Bring to a boil, and cook for about 10 minutes, or until easily pierced with a fork. Drain, and set aside to cool.
Place the bacon in a large deep skillet over medium-high heat. Fry until browned and crisp, turning as needed. Remove from the pan and set aside.
Add onion to the bacon grease, and cook over medium heat until browned. Add the vinegar, water, sugar, salt and pepper to the pan. Bring to a boil, then add the potatoes and parsley. Crumble in half of the bacon. Heat through, then transfer to a serving dish. Crumble the remaining bacon over the top, and serve warm.

Typical recipe but add some Goya yellow seasoning and your favorite "drained" canned veggies with a sprig of thyme.

boil potatoes and carrots cool , cut in cubes
apples, gherkins if you like boiled eggs cut in cubes
add canned corn and garden peas.
Add lots off mayo ( salt, pepper, mixed herbs)
It will last in fridge up to 4 days

i always make a potato salad with red potatoes, quartered hard boiled eggs, chopped green onions (the whole stem!), nice crispy bacon (crumbled...dont use imitation crap) and chopped parsley, a dollop of mayo (however much mayo you like actually) and salt and pepper. it's so yummmy!!

I always make mine with small red potatoes too, adding sliced hard boiled eggs, some dill, salt and pepper, and mayo to taste. That's it, very simple and good.

If you want to get a little fancier, you can use half mayo and half sour cream (not low fat though), makes it really rich and good, and would probably go well with your steak.

A good tip to keep it cold in the heat, is to fill your serving bowl with the salad and then fill a larger bowl halfway with ice, and set the salad bowl in it. Works pretty well, just remember to refill the ice periodically.

German potato salad is definitely a nice change, and I see you already have gotten some recipes. It's also "safer" if you can't keep chilled.

My recipe is a basic, but good one. Boiled potatoes (redskins or the small whites are sweeter and hold together better). I peel mine after boiling -- but you can leave the skins on if you prefer. Cut into large chunks. Add chopped celery, onion (vidalia or green onion work best) and hard boiled egg. My dressing is 1/2 sour cream and 1/2 mayonnaise (you can use light, but NOT fat free). I add just a little dijon mustard, and salt and pepper. Sometimes I add powdered garlic and dill weed (not dill pickle) to the dressing. Mix all together while the potatoes are still warm, to better incorporate the dressing. Refrigerate for a few hours for the flavors to really meld. Some people add sweet pickle or green olives, but I prefer those on the side and not in my salad.

I get stuck making potato salad for every family event. And have won a couple of contests for mine. I dont have exact quanities BUT I use:
5 lbs regular potatoes
1 lb bacon
1 red onion,
about 1/2 cup dill relish
dill weed
10 hard boiled eggs
1 jar BAMA mayo (that is the only one I ever use but u can use our favorite)
just a squirt of mustard
salt and pepper to taste

Just boil potato's IN THE SKIN until tender. Peel under running water while hot and skin peels right off!!
Using kitchen scissors, cut the bacon into bit size pieces then fry until crisp.
Cut onion into tiny bit size pieces by scoring the onion both ways in very close lines.
Mix 1 jar of mayo, dill relish, bacon, squirt mustard,dill weed, salt pepper, onion, and chopped eggs until blended.
At this point, I cube my potatoes up, lay them on a cookie sheet and salt and pepper them generously. Then fold the potato's into the mayo mixture. Adjust salt to your personal taste and enjoy!!

But there are a ton out there on http://www.allrecipes.com -- there's a few "Baked Potato Salads" that are supposed to have the taste of a loaded baked potato - I bet something like that would go great with steak. I haven't personally tried any of the others though, but I've always had good luck with recipes from that site.

I sometimes make this potato salad for a change of pace.

5 lb bag of potatoes (Idaho or red)
6 boiled peeled chopped eggs
1 cup Miracle Whip(light or fat free works great)
1/2 cup sweet relish
4 tbsp yellow mustard
6 sliced radishes
1/2 cup diced ham (optional)
4 ounces diced cheddar cheese
2-3 spring onions chopped
1/2 bag frozen peas(boil briefly to cook but do not overcook-rinse in cold water)

Mix all ingredients except potatoes and peas. After ingredients are fully mixed gently fold in potatoes and peas to mix well.

It seems like a weird combination with the radishes but they add a nice crunch and color if you slice them thinly.
