Have you thought of grilling the fennel and pineapple?
Or you could simmer the apples, pineapple, and oranges with some cinnamon, making a dressing from the guava maybe?

Good luck!

Hmm well does the entire dish have to be warm or can you have part warm part cold. Because I would say use the gooseberries, oranges, and mint to make a sauce some sugar to taste make sure you serve the sauce warm maybe even a little red pepper to give it a little kick. If you can add other stuff I would get some pecans, walnuts, or cashews. The rest of the ingredients I would say dice them up and marinate them in orange juice and olive oil or for an Asian twist sesame oil with a bit of the fennel and the cinnamon. When you marinate leave the stuff in a bag so the apples, guava doesn't turn color. When you serve it up pour the sauce warm over the ingredients. Make sure you drain the marinating sauce away. You don't want the dish watery. Ooh almost forgot make sure you slice the fennel into veyr fine juiliane cause yeah fennel is pretty tough to chew on in big peices.

On a side note shredded fennel and blood oranges makes for a really good salad by themselves.
