This is my all time favorite - I found it in the New Basics Cookbook (my food bible) and everyone absolutely raves over it. I believe that it is originally from a restaurant....It is a little more work than just a basic meatloaf, but the results are well worth the effort!

* 3 tablespoons unsalted butter
* 3/4 cup onion, finely chopped
* 3/4 cup scallions, finely chopped
* 1/2 cup carrots, finely chopped
* 1/4 cup celery, finely chopped
* 1/4 cup red bell pepper, minced
* 1/4 cup green bell pepper, minced
* 2 teaspoons of minced garlic
* Salt, to taste
* 1 teaspoon freshly ground black pepper
* 1/2 teaspoon ground white pepper
* 1/4 teaspoon cayenne pepper
* 1 teaspoon ground cumin
* 1/2 teaspoon ground nutmeg
* 3 eggs, well beaten
* 1/2 cup ketchup
* 1/2 cup half-and-half
* 2 pounds lean ground beef chuck
* 12 ounces sausage meat (not fennel-flavored Italian sausage)
* 3/4 cup fine fresh bread crumbs, toasted

1. Preheat oven to 375°F.

2. Melt the butter in a heavy skillet, and add the onion, scallions, carrots, celery, bell peppers, and garlic. Cook until the moisture from the vegetables has evaporated, about 10 minutes. Set aside to cool; then refrigerate, covered, until chilled, about 1 hour.

3. Combine the salt, black pepper, white pepper, cayenne, cumin, nutmeg, and eggs in a mixing bowl, and beat well. Add the ketchup and half-and-half. Blend thoroughly.

4. Add the ground beef, sausage, and bread crumbs to the egg mixture. Then add the chilled vegetables and mix thoroughly with your hands, kneading for 5 minutes.

5. With damp hands to keep the mixture from sticking, form the mixture into an oval approximately 17 x 4 1/2 x 1 1/2 inches.

6. Place the meat in a baking dish, and place the dish inside a larger pan. Pour boiling water into the larger pan until it reaches halfway up the sides of the baking dish.

7. Place the pan in the oven and bake for 35 to 40 minutes.

8. Remove the baking dish from the water bath, and let the meat loaf rest for 20 minutes before slicing and serving.

1 1/2 lbs hamburger meat
2 eggs
1 sleeve crackers
1/2 onion, chopped
milk to moisten

mix together and form into shape. Bake for approx. 1 hr at 350 degrees. Slice to insure thorough cooking. Cover with ketchup and bake for 10 additional minutes.

This is a family favorite!

I don't use an exact recipe, but I can tell you what I put it in.

Ground beef 20% and lean 8%

Salt and Papper

Finely chopped yellow and green bellpepper

Sweet Baby Rays BBQ sauce

Dried onions

breadcrumbs

Egg

I usually just make the regular recipe with ground beef, white bread or breadcrumbs, an egg and a little milk, but then I add McCormick's fajita seasoning, which gives it a little extra pop. My kids really like it too.

yes, this is my own because i don't make mine with eggs and bread crumbs or anything, but it's good.

ground pork and ground chuck
chopped bell peppers and chopped onions
can of tomato sauce
packet of lipton's onion soup mix
black pepper, and garlic powder.

i mix all this up in a bowl and then shape the meat in a loaf pan and bake it in the oven for an hour or so until its done.

the last 15 minutes of baking, i mix up some tomato ketchup, and brown sugar, then i spread it on top of the meat.

I think this was asked 3 times just yesterday. Doesn't Yahoo have answers that show up when before you actually post? I always look at those, and frequently end up not posting.

1-1/2 lbs ground beef
(1/2 lb. ground pork (optional)
1 egg
1/2 cup bread crumbs (I put about 3/4 cup of Pepperidge Farm stuffing mix in a meas. cup and add milk to soften it.. then squish out the milk.. great flavor)
s&p
chopped peppers
grated med. onion
parsley
gr. pepper strips
onion slices (sliced thin)
sm. can tomato sauce

Mix all ingredients (except onion slices, gr. pepper strips & tom. sauce)) well with your hands (easiest way).
Shape into loaf, and place in 8 or 9 inch sq. baking pan (I don't care for using a loaf pan... no room to spoon juices.)
Add gr. pepper strips and onion rings over top
Pour over tom. sauce. (the sauce gets flavored as the meat cooks)
Bake at 350 for about an hr 15 to 1.5 hours, spooning juices over a few times mid-way through cooking

Suggestions:
1: you can purchase a little bigger can of tom. sauce of you like more juices in the end,
2: spoon a few tablespoons of the tom. sauce into the meat mixture for added moisture and flavor.

Meatloaf surrounded by Macaroni

Meatloaf:
1 lb. ground chuck
1/2 lb. ground pork
1/2 lb. ground veal
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon chopped parsley
1 cup fresh bread crumbs
2 eggs lightly beaten
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup tomato sauce

Macaroni:
1 lb. long macaroni noodles
1 to 1 1/2 cans (15oz. each) whole tomatoes, crushed

Preheat oven to 350 degrees.

In large bowl combine meatloaf ingredients (meat through tomato sauce). Shape meat mixture into a loaf and place in the center of a large roaster and cover. Bake for 1 hour. While meatloaf is baking cook macaroni 2 minutes less than suggested directions, drain.

After meatloaf has been in oven for one hour add the par-cooked macaroni and tomatoes with juice. Lightly salt and pepper macaroni and tomatoes and mix. Bake for 30 minutes. Remove from oven. Transfer meatloaf to plate and allow to rest for 15 minutes before slicing. Serve meatloaf slices alongside macaroni.

2 pounds pounds hamburger 2eggs whole 1cup italian seasoned bread crumbs 4 teaspoons ketchup 1table spoon milk 1 half finely chopped onion 1 small stalk finely chopped celery 1half of a cup of peppers make a large loaf and top with ketchup bake in 350 degree oven until done about 1 to 1and a half hours.

ketchup
1 egg
bread or cracker to hold together
8 oz of cheese ( any flavor)

Mix ground beef with the ketchup and egg and the bread or crackers. then put it in a meat loaf dish. then put some ketchup on of it. then sprinkle the cheese on top. ( you don't have to use all the cheese)

Beefy Mushroom Meatloaf

4 oz mushrooms, chopped
2 tsp butter
2 lb lean ground beef
1/2 medium onion, finely chopped
1 10.5 oz can beefy mushroom soup
1/2 cup fine dry bread crumbs
2/3 cup quick cooking rolled oats
1 egg, lightly beaten
1/4 tsp pepper

Saute mushroom in butter over medium-low heat until browned and tender. In a large bowl, combine mushrooms and remaining ingredients, mixing lightly until thoroughly blended. Spray a 9x13 baking dish with cooking spray. Bake at 375 degrees F for 45-60 minutes.
