It could be SIKOTI = that is lambs liver cooked in oil and spices or SCORDO STUMBI slices of lamb cooked in a tomato sauce

The only lamb dish I can think of that begins with "s" is Souvlaki, which isn't a casserole. Moussaka is often made with ground lamb, but of course starts with an "m". Guess I'll have to join you in watching for answers!!

Hi are you sure it is made with lamb I only know of one with beef which is called Stifado which is a meaty stew with beef and baby shallot onions. The best part is the thick sauce which is made slightly sweet by the onions. (Incidentally the correct pronunciation is: Stifatho)

Could it be sofrito? It's lamb cooked in a red wine vinegar and garlic sauce.

SOFRITO
Prep Time: 15 Minutes
Cook Time: 45 Minutes
Ready In: 1 Hour
Yields: 4 servings

INGREDIENTS
2 tablespoons all-purpose flour
1 pound boneless lamb meat, cut into bite-sized pieces
1 teaspoon salt
1 teaspoon pepper 2 tablespoons olive oil
4 cloves garlic, peeled and minced
1 bunch fresh parsley, chopped
1 cup red wine vinegar

DIRECTIONS
1. Place flour in a medium bowl. Season lamb with salt and pepper, and dredge in flour to evenly coat.
2. Heat olive oil in a medium skillet over medium heat, and cook the lamb until evenly browned. Scrape up the brown bits from the surface of the skillet. Mix in garlic, parsley, and red wine vinegar. Reduce heat, cover, and simmer approximately 30 minutes, stirring occasionally.

Can be served on toasted garlic bread or in pita pockets. Might be good on rice also.

This has got to be stifado. It is served in all greek restaurants-

not an S, lamb stew is called 'Kleftiko' not sure the spelling is correct

Not sure about starting with an S but I have one that starts with a P----pastichio--Greek lasagna---you could use lamb instead of ground beef. I also, instead of using salt and pepper, I get a good brand of Mediterranean seasoning and use. It is wonderful!!

Yes it is served exclusively in Sammy's bar/cafe, the beach road, Limmasol and is called Sammy's lamb stew............

Have you ever noticed you never see sheep in Cyprus or Greece, but there are goats on every street corner, goat meat needs some long stewing................
