What is a meal that I can cook for my someone I am seeing?
ok, i love to cook. and I want to surprise him with a meal. he tells me that he likes italian food. (although all i know how to make is lasagna and spagetti) he has a west indian background (if that helps) and he loves food.
I want to make something that will knock his socks off (probably keep him LOL) what are some good dishes out there? thanks

How about Creamy Pesto and Sausage Lasagna!!!
Pesto
Cup of Basil
Half Cup of Italian Parsley
1/4 cup of almonds
4 cloves of garlic.
1/4 cup of Olive oil (but I would actually leave out oil)
Chop Ingredients in a food processor or Blender. Set aside.
Cook about a half pound of Italian sausage with onions. Add a pint of heavy cream and 2 table spoons of the pesto to the sausage. Last add sliced mushrooms to the cream sauce. (If you want the sauce thicke just add little flour to thicken.)
Layer you lasagna like you normally would and add the remaining pesto by smearing it in each layer, than you sauce and than a layer of cheese and repeat for each layer.
I don't normally add cheese to the last layer until I'm finished cooking but that's up to you. Just remember to garnish the top with shaves of basil for a nice presentation.
Serve it with your favorite garlic bread and a glass of Chardonnay.
Besides the wine, I took this recipe to my Friends at work and they all loved it. I hope you do to.

Make some lasagne with a side of garlic bread, a nice salad and great bottle of red wine.

You can't go wrong with a homemade lazagna.
However, if you want something trickier, I would make some stuffed pasta.
First of all there is nothing wrong with a great lasagna. Let me give you my tips. Use ricotta cheese for the filling and to it add one egg and salt and pepper. Make the sauce with S&P, garlic (fresh, chopped), basil (again fresh, but not totally necessary), a dash of oregano. Let the sauce simmer for a few hours and stir often. Make the sauce a bit more liquid than you usually would.
Now put a bit of sauce in the lasagna pan and layer uncooked lasagna noodles on top of that spread dollops of the ricotta, then grated parmesan, and some shredded mozzerella . Cover it with foil, put it in the oven and you will have a fabulous meal and it is oh, so easy.
Since he is of West Indian background you could make him an Indian dish. I made chiken tikka masala last week and it was excellent! A few of the ingredients you have to find at either an Indian or Jamaican market but it's well worth it. I made it following the instructions from the video below.
