What is the best recipe for making a cake from scratch?

I am thinking about opening my own bakery in a few years and I was wondering if anyone knew any recipes to making a simple yet tasty cake batter from scratch.

An easy cake to make up from scratch.
INGREDIENTS:
1 cup butter
2 cups sugar
3 eggs, separated
1/2 teaspoon plus 1/8 teaspoon baking soda
1 1/4 teaspoons cream of tartar
3 cups all-purpose flour (I prefer cake flour)
1/2 teaspoon salt
1 cup milk
1 teaspoon vanilla
PREPARATION:
Cream together butter and sugar; blend in the egg yolks. Add vanilla to milk. Sift together the dry ingredients. Alternating with milk mixture, add dry ingredients to the creamed mixture. Beat well.
Beat egg whites until stiff; fold into batter, mixing just until blended.

Pour batter into three greased and floured 8- or 9-inch cake pans or one greased and floured 13 x 9-inch baking pan. Bake layers at 375° for 20 to 25 minutes, or until a wooden pick or cake tester inserted in center comes out clean. Bake the one layer cake at 350° for 35 to 45 minutes, or until a wooden pick or cake tester inserted in center comes out clean.

We make this a lot,
CHOCOLATE CHIP SCRATCH CAKE

3 c. flour
2 c. sugar
1/2 c. cocoa
Pinch salt
2/3 c. oil
2 c. water
1 tsp. baking soda
2 tsp. vinegar

Beat all these ingredients together and pour into ungreased 9x13x2 pan. 2 eggs 2/3 c. sugar

Beat all together and spoon over mixture already placed in baking pan. 1 c. chopped nuts

Sprinkle over cream cheese mixture and bake at 350 degrees for 40 to 45 minutes or until tested.

This is my recipe for a plain sponge cake. It's a great multi-purpose cake, it has a texture that makes it ideal for decorating and you can flavor the batter however you want (lemon zest, vanilla, cocoa powder, etc).

6 large eggs
6oz granulated sugar
6oz cake flour, sifted

Whip the egg yolks and half the sugar to full volume (ribbon stage).

Whip the egg whites and the rest of the sugar to stiff peaks.

Fold the whites into the yolks until halfway incorporated.

Add the flour and finish folding.

Bake in a 10" cake pan that has been sprayed, lined with parchment paper, and sprayed again at 375F until done.

Yields: 1-10" cake

Chocolate Wacky Cake (always a moist cake)

3 cups flour
2 cups sugar
2 tsp baking soda
5 tbsp cocoa
1 tsp salt
2 tsp vinegar
2 tsp vanila
12 tsp oil
2 cups cold water

Mix flour, sugar, baking soda, cocoa and salt in a large bowl, stirring with a fork. Make three holes in mixture. Pour vinegar into one hole, vanilla in the next hole and oil in the third hold. Pour water over all and mix with a fork. Bake at 350f for 30 minutes in a greased 9" X 13" pan.

Hershey's best chocolate cake: the recipe is on every box of cocoa and it comes out well every time. It's also easy to experiment with and still get good results (like substituting the hot water for hot coffee and grating some dark chocolate into the batter.

The chocolate cake recipe on the back of Hershey's cocoa powder is excellent.
