Question:

Sweetish Meatballs???

I need an easy resipe that doesn't take long to cook. What could I serve them over to make a meal?

Answers:
Are you speaking of meatballs that are sweet or Swedish meatballs. I know that the meatballs seems a little bland, but it's not the meatballs that need all the flavour, it's the sauce.

For sweet meatballs I use this recipe.

2 lbs. lean ground beef
2 eggs
1/2 cup dry bread crumbs
1/2 cup water
1/2 tsp. garlic salt
Salt and black pepper, to taste
2 bottles (8 oz. each) chili sauce
1 cup grape jelly
4 tsps. lemon juice

In a large bowl, combine ground beef, eggs, bread crumbs, water and garlic salt. Season with salt and pepper. Mix well. Shape beef mixture into 1-inch balls.
In a large skillet, brown the meat balls. Remove the meatballs from the pan and combine chili sauce, grape jelly and lemon juice, mix well. Add meatballs. Cook, covered, over low heat 45 minutes, or unitl meatballs are done. Or you can pop them in a crock pot for at least 2 hours although they last forever in there. I server these with a toothpick.

For Swedish meatballs it is the same basic recipe, instead of the sauce mixture previously used add 2 cans of cream of mushroom soup, 2 cans of evaporated milk and one container of sliced mushrooms. They are cooked the same way and last just as long. These I serve with wide egg noodles, but you can serve on rice as well.

My grandmother used to simmer meatballs in grape jelly and beef broth. Then serve over brown rice.

You could serve them with a rice or pasta and make a meal out of it. Or have a meal of little mini appetizers. I've done that lots of times. Like, little meatballs, little shrimp, mini pizzas, or chicken wings. . things like that make for a fun meal. . . . I use the recipe that Emeril made on tv one time, they are SO good. I will put the link from the food network site below! Good luck!

They're called Swedish meatball's, hon. You can buy frozen meatballs and in a pot put the meatballs, add 2 cans cream of mushroom soup, a cup of sour cream, a teaspoon of Worstershire sauce, dash of hot sauce, 1/4 cup of milk. Simmer til heated through or better yet, if you have a crock pot put all ingredients in and let cook on high for an hour or on low all day. Serve over egg noodles or rice. Remember, Swedish, as in from Sweden.
