I refrigerated poundcake batter in the pan overnight. Can I still bake it?


Answers:
I've done this many times. I just sit it out on the counter for 30 minutes or so to get the chill out of it..Then I bake..No problems ever..

That's one of those things you just go for. Bake it and see. It's not spoiled because it was refrigerated, but you never now about the baking quality. It's worth a try rather than throwing it away.

The leavening may have worn out for being in the liquid overnight so the cake may be denser than usual.

It still may work... if they used double acting baking powder.

You may want to add another dose of baking powder before you bake to make sure. Don't add too much or you may throw off the taste a little bit.

If you used an unleavened recipe - no baking powder or baking soda, then it should work out. You may want to let the batter warm up a bit by taking it out of the refrigerator (1 or 2 hours) before baking.

NO NO No and yes! you can bake it, however it wont rise well! Baking soda/powder start to "work"once you add wet ingredients to them, so their effectiveness greatly diminishes if you let it sit with out baking. SOOOOo you need to bake it right away or end up with a very flat and not as light textured cake.
