hi made potato skins with cheese and bacon - but because iv scoped out the potato inside what can i do with it? any good ideas?

Mashed potatoes!! Add a little butter and garlic and you've got a great side dish! Yum...
you can make mashed potatoes or you can make potato pancakes :)
potato pancakes are always wonderful
If you don't like mashed potatoes or potato pancakes you cam just toss out the insides. Potatoes are really cheap and, after all, it was the potato skins you wanted in the first place.
Mashed taters, tater pancakes. fried taters, tater soup, taters on a stick, tater dip, tater salad, tater stuffing, tater dog food, etc.

What i like to do is put the insides in fridge then when ready to use them add a little butter, sourcream, and chives put in oven safe dish and top with bacon and cheddar cheese and bake at 350 for 20 mins and serve as a side dish called smashers
wonderful side. even better if you have dishes for everyone individuales portions

Use it too thicken a soup or stew.
Try:
Fry some chopped bacon in a soup pot. Remove the bacon and all but 2 tbls of the oil to brown some onions. Add potato guts, whole corn, 4oz cream cheese warm slowly and stir. Add milk till it is the consistence you like. Pepper and salt to taste, and serve toped with the bacon and cheese.
You can mash 'em and stir in some of that bacon and cheese and a touch of garlic with a couple tablespoons of cream or half and half and make loaded mashed potatoes. Cover 'em airtight in the 'fridge if you want to store 'em overnight, otherwise they'll start turning black. That's harmless, but it sure don't look real appetizing!
