Tex Mex Burger
1/2 cup mayonnaise
1 teaspoon Cajun seasoning
1 1/3 pounds ground beef sirloin
1 jalapeno pepper, seeded and chopped
1/2 cup diced white onion
1 clove garlic, minced
1 tablespoon Cajun seasoning
1 teaspoon Worcestershire sauce
4 slices pepperjack cheese
4 hamburger buns, split
4 leaves lettuce
4 slices tomato
Preheat grill for medium-high heat. In a small bowl, mix together the mayonnaise and 1 teaspoon of Cajun seasoning. Set aside.
In a large bowl, mix together the ground sirloin, jalapeno pepper, onion, garlic, 1 tablespoon Cajun seasoning, and Worcestershire sauce using your hands. Divide into 4 balls, and flatten into patties.
Lightly oil the grilling surface, and place the patties on the grill. Cook for about 5 minutes per side, or until well done. During the last 2 minutes, lay a slice of cheese on top of each patty. Spread the seasoned mayonnaise onto the insides of the buns. Put burgers in the buns, and top with lettuce and tomato to serve.
Cuban Style Burger
pound ground beef
1/2 pound ground chorizo
1 teaspoon salt
2 cloves minced garlic, optional
1/4 teaspoon black pepper
6-8 deli rolls
Preheat grill for medium heat. Combine meat and spices in a large bowl. Form into 6-8 patties, about 1/2 inch thick. Place on grill and cook 6 minutes per side. Remove from grill and serve on deli rolls with favorite condiments.
Gourmet Burger
1/2 pound of lean ground beef
1/2 pound of ground sausage
3 strips of bacon
2 T minced fresh marjoram
2 T minced fresh sage
4 cloves garlic minced
? roasted red bell pepper finely chopped

Heat up the grill on high.
Cook bacon till crisp and then chop up into small pieces.
In a large bowl, combine the first 7 ingredients and form into patties. Salt & pepper both sides to taste.
Put patties on the grill and cook for 3 minutes on one side, then turn over and cook till done, add cheese after burger is cooked thru

The way I always saw it, meatloaf is mixed, burgers are topped.
I like burgers that are a 50-50 mixture of ground chuck and ground sirloin. To me, that is the perfect ammount of fat to keep your burger nice and juicy, but still enough meat to have great flavor and texture.
All I add is a bit of salt and some Worchetshire sauce. No soup mix, no chopped veggies, nothing. Form them into about 5 oz patties (about the weight of a deck of cards), and pan fry for 4-5 minutes on each side flipping only once, or grilling.
The place you go crazy is the toppings.

* 1/4 cup shredded Gruyere cheese
* 1 pound 90%-lean ground beef
* 1 tablespoon Worcestershire sauce
* 1 1/2 teaspoons paprika
* 1/4 teaspoon freshly ground pepper
Cooking Instructions
Preheat grill to medium-high or preheat the broiler.
Combine Cheddar and Gruyere in a small bowl.
Gently mix beef, Worcestershire, paprika and pepper in a large bowl, preferably with your hands, without overworking. Shape into 8 thin, 4-inch-wide patties. Mound 2 tablespoons of the cheese mixture on each of 4 patties, leaving a 1/2-inch border. Cover each with one of the remaining patties. Crimp and seal the edges closed.
To grill: Lightly oil the grill rack (see Tip). Grill the stuffed patties over medium-high heat, about 4 minutes per side for medium-well. Asian Burger
2 pounds ground beef
1 teaspoon curry powder
1 teaspoon sugar
2 1/2 tablespoons chopped cilantro
4 teaspoons scallions, cut into 1/8-inch rings
1 cup chopped garlic
2 Thai bird chiles, minced
1 teaspoon cumin powder

2 bunches scallions, cut into 3-inch long pieces
8 shiitake mushroom caps
1/4 cup teriyaki sauce
4 sesame hamburger buns
Place the beef in a bowl, add with curry powder, sugar, cilantro, scallions, garlic, chiles, cumin, salt, and pepper, and mix well. Form into 4 (8-ounce) patties. Place patties on grill and grill to desired doneness. Place scallion pieces and shiitake caps on the grill and brush with the teriyaki sauce and grill until well charred.
Serve burgers on sesame buns topped with grilled scallion and shiitakes and more teriyaki sauce, if desired.

Well, when you make up your ground beef patties, mix a quarter cup of of A-1 Bold brand steak sauce into each pound of meat.
Then slap that on the barbie and grill it over charcoal. Y'might slap some sliced swiss cheese and a few grilled onions and mushrooms and a couple slices of fried bacon on each burger.
