I forget where I got this recipe, but we have had it several times, and it's always a hit.
Mexican Chicken Casserole
2 cups coarsely crushed corn chips, divided
1 (10 3/4 oz.) can cream of chicken soup
1 10 oz. can enchilada sauce
3 cups cubed, cooked chicken
1/2 cup finely chopped onions
1 cup shredded sharp cheddar cheese
In greased baking dish combine 1 cup corn chips & remaining ingredients except for cheese.
Bake at 375° for 30 mins. Top w/remaining corn chips & cheddar cheese. Bake another 5 minutes until cheese is melted.
I dot on sour cream and sprinkle with sliced black olives sometimes just before serving.

Take (3) lean breasts and boil them (microwave is o.k.).
Remove from heat, remove from water, allow to cool.

1 chicken
3 peppers

3 zucchini
100gr black olives
1/2 glass olive oil
sal & pepper
cut the chicken in 8 parts & deep fry with olive oil..salt & pepper to taste until golden. Add pepper & zucchini. Mix & cook 45 minutes in low heat then adding the black olives 5 minutes before cooking end.

Grilled Raspberry Chicken
? 6 boneless, skinless chicken breasts
? 1/2 cup frozen raspberries, thawed
? 1 cup raspberry vinaigrette
? 1/4 cup raspberry vodka (optional)
? 1/4 cup finely chopped mint leaves (optional)
? Fresh mint sprigs, for garnish (optional)
? Fresh raspberries, for garnish (optional)
Rinse chicken breasts and pat dry with paper towels. Place chicken in a large zip-top bag. Add raspberries, vinaigrette, vodka (if using) and chopped mint. Squeeze air out and seal bag. Gently massage the bag to mash raspberries. Marinate in the refrigerator for 1 to 4 hours.
Preheat grill to medium-high heat. Place chicken breasts on the grill and cook for 4 to 6 minutes per side. Remove from grill and place on serving platter. Garnish with fresh mint sprigs and fresh raspberries if so desired.

Merinade your chicken breast in ranch and thousand island dressing ( about ha;f and half) and then just cook them on the grill It's really good and if you have left overs you can use them in different recipies or a salad.

I tore it up..warmed it up in a pan with salsa..put it in a tortilla with cheddar cheese and viola..The boys loved it..My oldest used corn tortilla's..He said it was really good..
If you like stove top stuffing, Buy a box and on the back it has a recipee for a stuffing skillit meal its really tastey!
You can cook the chicken in a pan with a little oil or butter and some seasoning then make some mashed potatoes & gravy & broccoli and BAM! you have a meal
