It has been a couple years, but here goes. My husband was in Korea and he sorta told me how to make it - I didn't use a recipe.
1 head cabbage sliced thin (or bok-choy)
3 - 4 chopped carrots
6 - 8 chopped green onions
6 - 8 chopped white radishes
salt
paprika
crushed red pepper
combine all and let set in a covered container for about 2 week. It will begin to ferment and make juice from the cabbage. If you need to add liquid, you can add water, but don't add too much. Pack into quart or pint jars and keep in the frig. It will be good to eat as long as it is kept cool. You can buy packages of Kim Chee seasoning also.

3 tablespoons plus 1 teaspoon pickling salt 6 cups water
2 lbs. Chinese (Napa) cabbage, cut into 2-inch squares
6 scallions, cut into 2-inch lengths, then slivered
1 1/2 tablespoons minced fresh ginger
2 tablespoons Korean ground dried hot pepper (or other mildly hot ground red pepper)
1 teaspoon sugar

Kimchi Burgers:
30 min 15 min prep
4 servings
24 ounces lean ground beef
2 teaspoons fresh ginger, finely chopped
2 garlic cloves, finely chopped
2 1/2 tablespoons teriyaki sauce
1 1/2 teaspoons chili flakes (optional)
salt & pepper
Garnish
8 tablespoons shoestring bamboo shoots
8 tablespoons sliced water chestnuts
4 slices tomatoes
4 slices raw sweet onions
2 cups mushrooms
4 hamburger buns, of your choice
1. Mix together the meat, ginger, garlic, teriaki sauce, salt & Pepper.
2. Form into 4 patties.
3. Lightly spray a fry pan with oil and over high heat brown one side of the burgers.
4. Flip the burgers turn heat to medium add mushrooms to the pan and cover it.
5. Cook apprx 10 minutes flipping the burger a couple of times replacing the lid each time.
6. Turn heat to low and continue to cook for apprx anothe 5 minutes.
7. Toast one side of your bun.
8. Add burger and condiments to the bun and enjoy (I hope).
