Chicken Marinade for someone with dietary restrictions?

After her most recent physical, my Mother has been placed on a VERY strict diet (due to very high cholesterol, triglycerides, and sugar levels). My husband and I want to have them over for dinner this week, and we are going to grill some chicken breasts. I believe my Mom can have something around 1T of oil a week....no butter, no extra salt. She can have all the vegetables (non-starchy) that she wants, and can cook with any kind of herb.
Does ANYONE have any ideas as to how I could marinate her chicken that doesn't include olive oil or anything bad for her? I'm at a total loss!!


Answers: here is my fav for chicken. I think it meets your restrictions (on and good job for even trying. Some daughters wouldn't go this far. Good for you)

Boneless, skinless chicken breasts.
BBQ sauce (any kind will do)
one finely chopped hot pepper (I use jalapenos, but any kind will do)

Put chicken in baking dish lined with aluminum foil for easy clean up.
Pour BBQ sauce on top. Fill up bottle with water and pour that on there until chicken is covered. Mix it all together well
Sprinkle hot peppers on top.
Cook for 20 minutes on 305 until done.

easy.

Here comes my second idea.
Same recipe but instead of BBQ sauce and Jalapenos, add FAT FREE Italian dressing and fresh cut up basil.

You can basically substitute any sauce you find that is fat free and meets your diet requirements and add any spice or pepper. Throw some veggies in there and you can knock out a side dish to save time. Source(s):
Busy wife on a diet! Is olive oil bad for cholestral? I don't think so. Rub with olive oil and then sprinkle with any flavor of the Mrs. Dash, salt free herbs mixes. They are all good. I don't know if this will work for her or not...

I took a pint of lowfat buttermilk, a 1/4 cup of hot sauce, 1/4 teaspoon of cracked black pepper, and a teaspoon of Ms. Dash herb and garlic seasoning. Mixed it together and marinated the chicken over night. Next day I drain all of the marinade off and grilled it.

Was very tender, moist and had no leftovers... mango-lime marinade

1 large mango, peeled, seeded and cubed
juice of two limes
3 tbsp sugar
3 TBSP white wine
3 TBSP light soy sauce
2 TBSP dijon mustard
1/4 tsp cayenne pepper

puree above in a blender, marinate chicken overnight turning once... remove from fridge 1 hour prior to grilling...

serve with Greek yougurt salad:
fat-free yougurt
finely sliced cucumber
1 tsp salt
2 finely chopped garlic clove, combine and refrigerate one hour... A citrus marinade of lime,lemon and orange juice,chopped fresh cilanro,a little chopeed jalepenos,a little chopped gerlic and fresh grond pepper.When you are ready to grill drain off some of the liquid saving enough ,about 2 tablespoons foe each breast that you'll be cooking.Make a foil packet for each peice and wrap the chicken inside with the marinade.Grill packets fot about 20 minutes,turning ocassianly.Carefully unwrap hot packets and place chicken directly on the grill,about 2 minutes per side to char the meat.I like to serve this with spanish rice,black beans and fresh salsa.Guacamole is good too,with warm tortillas.
