Can you freeze fresh zucchini? If so, how?

We have a lot from our garden but don't want them to go to waste.


Answers: I just defrosted a bag I prepared earlier this month.

I just wash & cut them up & freeze them in a gallon freezer bag. They cook up fine. We used to freeze it for zucchini bread. We'd grate it...lay it out on a paper towel and blot with another paper towel to get the extra moisture out. Then put in a ziplock freezer bag. They shouldn't freeze too well - far to much water content. My mother-in-law makes a relish. Here's a site with a few recipes to check out.

I'll be doing that with most of my Kiwis - have about 400 of them and only one male & female plant.
