Pickled pigs' feet and head cheese- anyone else like this stuff or know how to make them?

My mom used to make "head cheese" out of port shoulder, and said it was just like my Minnesota great grandmother's. Where are these foods from, and what do you eat them with? I've never met anyone else who wasn't just disgusted by the idea of either one of them.


Answers: I just heard an interview with a chef who was talking about head cheese. My only experience with it is seeing how nasty it looks in the grocery store deli section, but when when he described the ingredients it actually sounded tasty. He said that it was made with pork, simmered in white wine with herbs, then a gelatin is added. I think he said you eat it with French bread or crackers.

If I were you, I'd check out FoodTV's website or Epicurious.com for good recipes. Enjoy! No emoticons here - so i'll just say PEWK! how can you be disgusted by something you never tried ?

did you ever have a hotdog ? let me give you a list of the igredients (trust me I know, I have seen them being made):

Pigs noses
Pigs ears
pig skin
pork belly
pig lips
beef tongues
beef stomach
lard
potassium nitrite (makes the stuff pink, not gray it is in natural state and gives you cancer)
lots of salt...

how about a steak, eh ?
they feed cows dead, ground up farm animals to make them grow faster, and oh, the grease fast food restaurants discard from frying french fries and burgers...... mmmmm, mmmm good...
does that disgust you ?

EDIT: ss98, believe you me, I am not kidding, food industry was part of my education... as for the dish you mentioned, I love it, it is delicious...
EDIT2: the FOOD administration rules allow a certain amount of rodent hair (YES!!!) in a hot dog... please let me tell you how rodent hair gets into hotdogs... the rodents lick their fur and swallow hair... yes, it only has one way to leave their bodies... ya thunk ??? I believe the standard used to be 20 hair.... thats is sick I am a vegetarian so ewwww but I guess everyones different LMAO @Bob...ok now THAT'S gross. Thanks, I knew they weren't good but..yuck lol

anyhow, never had head cheese, never even heard of it, but I have had pig feet, but not pickled. We boil it and then add salt pepper and lemon...and I know most people think it's gross, but it's soooo good :)
