Answers: It is the chlorophyll. Instead of boil, try steaming, you maintain more vitamins that will leach out with the green. Did it take you all day to come up with that witty question? Duh! Artichokes are green!! no it is the chloroplast that is comming out of the cell walls of the plant its called chlorophyll, its the natural sustance that makes plants green abd allows photosynthesis. lol naturally green veggie (no dye included) lol Carrots turn the water orange, beets turn it red, etc. It's not dye!! Because the artichokes are naturally green due to chlorophyll.
