What is a double brolier?!


Question:

What is a double brolier?

I don;t know if it's a boiler or broiler, but I need it for a recipe. I have no clue what it is though, so ur help is very much needed!!!

Answers: A double boiler, generally used to melt things that scorch, like chocolate.

An easy way to do it is to fill a saucepan with water, about 1/3 of the way up, and place a metal or glass bowl on top of the pan, making sure it fits nicely without touching the water.

The simmering water underneath will melt or cook what you need. Just be sure the bowl doesn't touch the water and watch out for leaking steam from the surrounding bowl. Wear oven mitts if the steam slips out. It's a double boiler. Take a glass or metal bowl and place it over a pot of simmering water. The indirect heat from the steam evenly, but slowly heats the bowl causing whatever is in it to be heated gradually. It's usually used when cooking with eggs, chocolate, or anything that needs to be tempered. A bain-marie (also called a double boiler) is a device used in industry (phamaceutical, cosmetics, conserves, etc.), chemical laboratories, and in cooking to heat materials gradually to a fixed temperature.

The double boiler consists of a large container filled with a working liquid (usually water) and another, smaller container filled with the substance to be heated. The smaller container is partially immersed in the larger container, and the larger container is heated. The temperature of the working liquid cannot normally exceed the boiling point of that liquid at the ambient atmospheric pressure, and so the temperature of the inner container can be brought to a known limit and held there by bringing the outer working liquid to a boil. Convection in the working liquid of the outer container also improves the uniformity of heating in the inner container. When the working liquid is water and the bain-marie is used at sea level, the maximum temperature of the inner container will not exceed 100 degrees Celsius (the boiling point of water at sea level). Other working liquids (oils, salt solutions, etc.) can be used to change this maximum temperature. A double boiler is two separate pots. The bottom pot you fill up 1/3 full with water. Then you take the second pot which should have come along with the first pot and put it over the first. Then put what you have to cook in the pot(chocolate chips, etc) and turn on the stove. The hot steam will heat the top pots bottom and begin to melt whatever you needed melt. Hope this helps.
