I have a taste for chicken breasts and potatoes...any suggestions on how to prepare them?
I'm hungry and I took out chicken breast to defrost. I kinda have a taste for mashed potatoes but if you guys can help me out with a good idea for preparing the chicken nreasts and even the potatoes I would appreciate it. I'm so tired of the same ol same ol.

the breast are boneless and skinless If they are boneless and skinless, then all you have to do is pour some marinade over them or any sauce you like (like Diana sauce), put them in a pan and bake them in a 400 degree oven for about 20 minutes (check to make sure there is no pink left) meanwhile boil your quartered potatoes in salted water and cook til fork tender. Or you could roast the potatoes in with the chicken,coating them in Shake-n-Bake perfect potatoes Herb and Garlic flavor (you have to chop them up in chunks) and have it all cooked the same time. If you don't like sauce or marinade, use some Shake-n-Bake coating in these flavors...Italian, Cajun, Original, or honey garlic glaze. I like to mix it up and use half original and half Italian (for my kids mostly,cause the original is boring to them). And to top the chicken, I use some sliced marble cheddar and/or some mozzarella. If you don't like shake n bake potatoes and prefer them boiled, and mashed..add some chopped apples (at the last possible moment or it will turn brown), boiled egg -chopped, and some chopped up sweet pickles (bottled kind) to add variety to the mashed potatoes.Corn is also a nice addition to the potatoes, or you could serve it separate. Hope this helps somewhat. :) If you have bone-in chicken breasts, I roast mine in the oven with quartered onions & potatoes, which you can season however you wish. Comes out delicious. hey they have some kits in the grocery store made by betty crocker or something like that. it has the seasoning and potatoes all u have to do is add the chicken... they're good too. or just peel u some potatoes, mash em, bake some chick breasts, put that in caserole dish and let it sit in the oven for a while and put some cheese on top You can marinate the chicken breasts in Catalina salad dressing, and then put them on the bar-b-que. Serve with stuffed baked potatoes. - Enjoy Put them on the barbeque grill. But rub butter on the potatoes and wrap them with foil wrap before putting them on the grill. Fried chicken and loaded baked potatoes or mashed potatoes with gravy sounds really good to me. I took out a package of bone-in chicken breasts last night & thawed. I sprinkled both sides with Stubbs BBQ rub earlier & I'm going to grill them on the charcoal grill over medium/hot coals til juices run clear. I'm making garlic mashed potatoes, peas & mushrooms, grilled corn & wheat rolls........ French onion soup mix and spicy brown mustard on the chicken .
Brush mustard on chicken , press chicken breasts in the french onion soup mix and bake them for 45 min.
However you like your potatoes . Balsamic & Basil Chicken Breasts
Ingredients
4 boneless, skinless chicken breasts
2 - 3 Tbsp. Balsamic & Basil Dipping Oil
4 Tbsp. spaghetti sauce
4 slices mozzarella cheese
Directions
Marinate chicken breasts in Balsamic & Basil Dipping Oil for 30-60 minutes. Heat skillet over medium-high heat, add chicken; sauté 3-4 minutes on each side or until chicken is done. Preheat broiler. Top each chicken breast with 1 tablespoon spaghetti sauce and 1 slice cheese, trimmed to fit chicken. Broil until cheese browns. Serve hot. Makes 4 servings.
Balsamic & Basil Roasted Potatoes
Ingredients
8 - 10 diced red potatoes
1 diced yellow bell pepper
1 diced orange bell pepper
2 diced medium onions
1/2 cup Balsamic & Basil Dipping Oil
1/4 cup grated Parmesan cheese
Directions
Combine first 4 ingredients; drizzle with Balsamic & Basil Dipping Oil. Toss. Place in large baking pan. Bake at 375° for 45 minutes or until potatoes are tender. Sprinkle with cheese before serving. Makes 8-10 servings.

But this one is definately all carbs! Try this with the chicken
Pour a bottle of Italian dressing in a bowl, soak your chicken in it for about 15 minutes. dip chicken in flour then back in to dressing then in flour again, then fry in hot oil on medium heat for about 8 minutes on each side or until golden brown.
While this is frying peel and dice potatoes, lay on large sheet of heavy foil add 4 Tablespoons butter, 1 small diced red bell pepper and a small onion add a little garlic salt and sprinkle with black pepper. Wrap foil around tightly and bake in 350 oven for about 30 minutes or until tender I'm going to assume that the breasts are on the bone with skin. Peel the potatoes and cut into 1/2-in slices. Parboil the slices for ten minutes. Meanwhile, prepare a roasting pan, grease lightly and toss in "stuff" to taste. Stuff could be onions sliced or chopped coarsey, garlic, shallots, carrots cut into 1/4-in dice (so they'll cook) and other aromatic vegetables to taste. Sweat all of these while the potatoes parboil.
Drain the potatoes, make them good and dry, then toss into the roasting pan on top of the vegetables, arrange the chicken on top of the potatoes, add spices to taste (sage + thyme on the potatoes and on top of the chicken) and roast at 350 degrees for 20-30 minutes or until juices run clear when you poke the chiken with a fork. i like to marinate them in soy sauce with garlic powder and oregeno and then grill or bake. I like to use the onion soup mix for potatoes. Add oil, dry onion soup and bake according to package. Sometimes I use my salad shooter and slice the potatoes paper thin deep fry and they taste like potato chips.
