Looking for a dessert using pecans and coconut?
I'm getting ready to go on a diet and am ridding all of my cabinets of all my old food and starting off new. So "i'm splurging for now...I have some pecans and coconuts from my last fat-filled dessert, which was sock it to me cake. I have no milk so no recipes requiring milk. Thx
Answers: Go to allrecipes.com. You can type in ingredients and it'll find you a recipe. You are obviously destined to enjoy a German Chocolate Cake. It's flavored with relatively mild chocolate, often using cocoa, and the layers separated and topped with a pecan-coconut-brown-sugar yumminess.
I'm salivating just thinking about it! This takes FOREVER to make, but German Chocolate Cake. Look it up online, I can't really explain how to make it... it's a gift. I tried to find one that you would already have all or most of the ingredients. Try this...
Pecan Bars
INGREDIENTS
1 cup all-purpose flour
1/4 cup shortening
1/4 teaspoon salt
3/4 cup white sugar
1/4 teaspoon salt
2 tablespoons all-purpose flour
2 eggs
2 teaspoons bourbon
2 cups flaked coconut
1 cup chopped pecans
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease 9 inch square baking pan.
To make crust: In medium mixing bowl, combine flour and salt. Add in shortening until mixture resembles coarse crumbs. Press dough into baking pan and bake for 15 minutes.
To make the filling: In large mixing bowl, beat sugar, eggs and bourbon. Slowly add in flour and salt, mixing well. Fold in coconut and pecans.
Spread filling over hot crust. Bake 12 to 15 minutes, or until lightly browned. Let cool on wire racks before cutting into bars. I like brownies, especially for a July 4th BBQ!
