Does anyone have a recipe for chocolate chip muffins?!

Does anyone have a recipe for chocolate chip muffins?

Mine always come out like bread and the chocolate chips melt

Chocolate Chip Banana Muffins

3/4 cup all-purpose flour
3/4 cup whole wheat flour
1/2 cup wheat bran
1/2 cup packed brown sugar
1 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
2 eggs, lightly beaten
1/4 cup fat-free milk
1-1/3 cup mashed ripe bananas (2 to 3 medium)
1/3 cup unsweetened applesauce
1 tsp vanilla extract
1/2 cup miniature chocolate chips
1/3 cup chopped pecans

In a large bowl, combine the first 7 ingredients. Combine the eggs and milk, stir in the bananas, applesauce, and vanilla. Stir into dry ingredients just until moistened. Stir in chocolate chips.

Coat muffin cups w/ nonstick cooking spray or use paper liners: fill 3/4 full w/ batter. Sprinkle w/ pecans. Bake at 375 for 18-22 min or until a toothpick comes out clean. Cool for 5 min before removing from the pan to a wire rack.


CHOCOLATE CHIP CINNA-MUFFINS

Original recipe contains 245 calories, 10.5 grams of fat and only 1 gram of
fiber per muffin.

a.. 6 tablespoons granulated sugar
b.. 2 teaspoons ground cinnamon
c.. 1 cup whole-wheat flour
d.. 1 cup unbleached, white flour
e.. 1/2 cup granulated sugar (or substitute 1/4 cup Splenda and 1/4 cup
granulated sugar, if desired)
f.. 3 teaspoons baking powder
g.. 1/2 teaspoon salt
h.. 3/4 cup low-fat milk
i.. 3 tablespoons canola oil
j.. 3 tablespoons fat-free sour cream or vanilla yogurt
k.. 1 large egg (higher omega-3 egg, if available)
l.. 3/4 teaspoon vanilla extract
m.. 2/3 cup mini, semi-sweet chocolate chips
n.. 1 1/2 tablespoons no-trans margarine (with 8 grams of fat per tablespoon, such as Take Control)


Preheat oven to 400 degrees. Coat the inside of each muffin cup with canola cooking spray. Mix 6 tablespoons sugar and 2 teaspoons cinnamon in a small bowl. Set aside. In medium bowl, combine flours, 1/2 cup sugar (or 1/4 cup sugar and 1/4 cup Splenda), baking powder and salt.

In mixing bowl, beat the milk, canola oil, sour cream (or yogurt), egg and vanilla until smooth. Add dry ingredients to mixing bowl and beat on low just until combined. Stir in chocolate chips. Fill each prepared muffin cup with 1/4 cup of batter (1/2 cup if using the Texas-size muffin pan).

Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool muffins slightly before removing the pan. Meanwhile, melt 1 1/2 tablespoons of no-trans margarine in microwave. Brush melted margarine onto the top or bottom of muffins and immediately roll in the cinnamon sugar.

1/2 cup dark brown sugar
3/4 cup milk
1 tablespoon vegetable oil
2 teaspoons pure vanilla extract
1 cup semisweet chocolate chips

Special Equipment: 12 (1/2-cup) capacity muffin tin, paper muffin liners, cooking spray

Preheat the oven to 350 degrees F.
Line the muffin tin with paper liners and lightly coat with cooking spray. (This may seem like overkill, but otherwise the muffins will stick.)

Whisk the flour, cocoa, baking powder, baking soda and salt in a medium bowl. In another medium bowl, lightly whisk the eggs, then whisk in the butter, brown sugar, milk, oil and vanilla.

Quickly fold the wet ingredients into the dry with a rubber spatula. Just before the batter comes together, fold in the chocolate chips—don’t mix the batter too much or the muffins will be tough. Divide the batter among the muffin cups (1/4 cup of batter per muffin). Bake until a tester inserted in the center comes out clean, about 25 minutes. Turn the muffins out of the tins, cool on a rack.
